Sameera Reddy Instagram – How do we make leftover Rajma exciting? We turn it into Yummy Easy Mexican wraps with few ingredients from your fridge! 💃All you need is . Chopped Green Capsicum . Boiled corn . Crumbled Paneer . Shredded Cheese or slices . Cooked Rajma (however you like it). Homemade Tortilla. Homemade tomato base sauce . . 💃Homemade Tortilla – 1/2 cup maida 1/2 cup whole wheat aata 2 tbsp oil salt , water . . 💃Mix all ingredients to make a soft dough and let it rest for 20 minutes . Roll out into large rotis . And cook on both sides on medium gas. . 💃Homemade Tomato Base Sauce – ( can be used for pizza /pasta also) . 6 tomatoes 1 Finely chopped onion 2 tbsp olive oil 2 cloves garlic chopped 1/2 tsp black pepper powder 1/2 tsp sugar Salt to taste 1 tsp italian seasoning . . – blanch the tomatoes ( blanching is putting the tomatoes in boiling water till the skin splits) then peel , cool and purée. – Put the oil in a pan, add the garlic and onion . Cook till translucent. – Add the tomato purée , salt, sugar , pepper and seasoning. – Cook on medium gas till sauce thickens . Set aside to cool . . 💃Make the wraps with spooning the rajma, corn ,capsicum and crumbled paneer into the Tortilla Roti: Fold and place into a baking dish as shown in the video . 💃Generously spoon the tomato base sauce and sprinkle with lots of cheese . I used slices because thanks to lockdown i only had that! . 💃Bake for 15 -20 min or until the cheese is bubbly . Drizzle some olive oil and serve! . 💃You can also team this with our easy Mexican salsa ( from our previous video ). . 💃Have fun cooking!
