🥙Dal Makhani – start with 3/4 cup Black Urad Dal and 1/4 cup rajma soaked overnight .
Please put 3 cups of water and pressure cook it till soft . * ½ cup finely chopped onions
* 1 or 2 green chilies – chopped
* 2 tsp ginger garlic paste * 1 cup tomato puréed * 2 tbsp tomato paste / purée (can skip if not avail ) * 3 Whole black pepper * 2 to 3 cloves
* 1 black cardamom (badi elachi)
* 1 stick cinnamon
* 1 tej patta (bay leaf)
* 1 teaspoon red chili powder
* water as required
* ¼ fresh Cream ( I’ve skipped this )
* 1 teaspoon crushed kasuri methi (dry fenugreek leaves)
3 tablespoon butter – salted or unsalted
* salt as required.
🥙In hot oil add the whole masala -Tej patta. Pepper. Clove . Badi elachi . Cinnamon till it smokes.
Add the onions and ginger garlic paste .Fry till translucent.
Add the puréed tomato & paste
Add the red chili powder ,Kasuri methi & salt .Cook till soft . Add butter & water for consistency. Simmer for 30 mins . Add white butter and switch off the gas . 🥙
Heat a piece of charcoal till red hot .Pick it up with tongs & place it in a katori as shown in the video , put a few drops of ghee or oil & Immediately cover it to make sure the smoke in sealed inside the pot . Let it sit for at least 1 hour . Simple easy aromatic Dal Makhani!
🥙Royal Peasy Paneer ☀️
300 gms paneer cubes
6 Tomatoes chopped
2 Onions, large chopped
Whole masala -8 black peppercorns
* 6-8 cloves
* 4 large badi elachi
* 1-2 sticks cinnamon
* 4/5 tej patta
Salt to taste
Red chilli powder/Haldi powder
1 cup Boiled peas
Chopped coriander
Fresh cream 1/2 cup
Note : no water to be added at any point to this cook!!!
Fry the paneer well on both sides and set aside . In the leftover oil . Add the whole masala till it smokes.Add the red chilli powder & Haldi powder .Add the onions and cook till translucent.
