We used a very simple recipe for the pizza dough! It’s not perfect but it works 🍕
4 g instant yeast
2tbsp olive oil
270 g flour
165ml warm water
2tsp sugar
Pinch of salt
🍕
Add the instant yeast and olive oil to the flour . Mix well . In the warm water add the salt and sugar and pour slowly into the flour .
Mix all the ingredients in a bowl until a dough forms. Knead the dough for at least 10 minutes, then form a ball of the dough with your hands. Take a clean bowl and cover it in a light layer oil . Put the dough in the bowl and lightly brush with some olive oil . Cover the bowl with a towel/clingfilm and let the dough rise for 1 hour. Once risen take the dough from the bowl and cut it in 4 parts to make 4 pizzas. Roll out the dough with a rolling pin or flip it like Mr @vardenchi 😜 Once the pizza is rolled out, form a crust with your hands if you want. Top the pizza with your favourite toppings. I topped mine with tomato sauce, cheese , olives and basil . Bake the pizza in a preheated oven for about 15 minutes on 210 degrees celsius. Enjoy!

The pulses to be soaked overnight –
1 Katori White matar (peas)
1/2 Katori Chowli
1/2 Katori Moong
1/2 Katori Brown Channa
1/2 Katori Matki .

Important when you pressure cooker the soaked pulses -For them to be fully cooked, water should not be more than one cm above the beans in the cooker. No salt should be added at the point .
Pressure cook the beans for 8 whistles or as you deem fit.

For the Tadka in hot oil-
1 tablespoon mustard seeds
1 tablespoon methi seeds
1 tablespoon jeera seeds
10 peppercorns
5-6 pieces cloves
2 large black cardamom
3 star anise
3 one inch pieces cinnamon
2 tablespoons sesame seeds
1 tablespoon khuskhus seeds
15 curry leaves
1 teaspoon hing
🌟to be added after the cooked beans –
2 tsp jeera powder
2 tsp coriander powder
A pinch of haldi
1 cup grated coconut
10 pieces Kokum
🌟to be served with the Misal/Usal –
Hot mix /Namkeen
Chakli
Pav
Boiled potatoes
Chopped onions
Tamarind date sweet chutney -( Recipe in my pani puri igtv)
Spicy green chutney
Red chilli powder
Beaten curd

After the tadka, Be quick to add the cooked beans so the hing should not burn. To this now you add salt, jeera powder, coriander powder, a tiny bit of haldi, a cup full of grated coconut and I’ve used pink Goa kokum.

Leave all this to boil and simmer for a full 10-15 minutes. It brings together all the goodness of the spices and beans.

On the table you need a large bowl of two chopped onions, two boiled and finely diced potato, a bowl of beaten curd, some sweet tamarind chutney, some spicy chilli-coriander chutney(which we didn’t have!) and any Indian namkeen. Like hot mix, chaklli, muruggu, sev……

Fill the bowl halfway with this flavourful Usal, add some potatoes, onions, chutneys, dahi and load on the crunchy namkeens. This is Dahi Misal.

For Pav Misal, don’t add the crunchies or dahi. Have it steaming hot and soak your pav into it. enjoy
