Woke up early morning and headed straight to the fish market. Got my hands on this freshwater pomfret which was perfect to make the banana wrapped fish. Meen Pollichathu is one of the most sought after recipes of Kerala. This method of pan-frying the fish and then steaming it results in a fish that is crispy fried on the outside and moist and flaky on the inside. Absolutely delicious…Enjoy!

No mask, no distancing, no worry of sorts. Can barely imagine going back to this.

The perfect way to kick the lockdown blues was to make this serenely beautiful part of the south of India my home for a month. Here’s welcoming you all to my home away from home in Kerala! Since SwanKitchen is now in the land of spices, I had to kick start my Malayali culinary journey with this lip-smacking slow-roasted chicken. I’m in love with the process of dry roasting powdered spices and frying the meat in coconut oil with shallots and curry leaves. I had to give this immensely popular Nadan chicken a shot and of course I had to give it my twist by adding some freshly harvested green peppers. I promise you, you will be left licking your fingers.

I love trees! Living amongst them gives me a feeling of living with my grandparents. They have witnessed my history, they know exactly what I need, they are always there to provide me with their fruits, shade, and clean air. I feel most secured and loved when am living amongst them. Just gazing at these giants my anxieties disappear and I get a fuzzy feeling of goodness, wellbeing, and kindness too.

I am making it a daily practice of interacting with trees around me just by acknowledging them with a quick pat or a big hug!
