Here is Felicity and I pretending to get along while we make Spaghetti con zucchine alla Nerano. We discovered this dish at @ristoranteloscoglio on the Amalfi coast and now we make it all the time at home (having learnt to make it properly while filming Searching for Italy!)

Zucchini / Courgette Fritters – Felicity grew some gorgeous zucchini/ courgettes in our garden this year so I put them to good use and these were devoured in seconds! â €
â €
– Grate 1 zucchini finely â €
â €
– Clean the flowers gently and chop finely â €
â €
– Salt the zucchini (not the flowers) and squeeze out any excess water â €
â €
– Whisk 1 egg yolk and add to zucchini and flowersâ €
â €
– Add a table spoon of flour and some salt and mix wellâ €
â €
– Add some grated parmesan and more flour if needed â €
â €
– Heat a pan with oil â €
â €
– Add a spoonful of the mixture to the oil and flatten with the back of the spoon. â €
â €
– Fry until golden â €
â €
– Sprinkle with some extra Parmesanâ €
â €
– Devour. â €

– 50ml gin
– 25ml fresh lemon juice
– 1/2 tbsp sugar syrup
– 1 tbsp Creme de mure
– Blackberries and a sprig of mint as garnish
