Stanley Tucci Instagram – Serves 4 (in my house)
1kg clams
Half an onion diced
One garlic clove split in two
Two pepperoncini
1 cup of white wine
1 sprig of thyme
2 sprigs of parsley
Handful chopped parsley
Evoo
Clean the clams by submerging in cold very salty water (this purges them of grit!)
Discard any open ones.
Sauté the onion and garlic in a pan in evoo
Add one or two pepperonci 🌶
Add the white wine, raise heat to high to burn off alcohol
Add the clams and a sprig of thyme, two sprigs of parsley 🌿
Season with salt and pepper
Place a top over the pan and the clams will start to open.
After two minutes remove the cover and shake the pan gently. If the clams have not started to open place lid back on for a minute
Make sure all (or nearly all) the clams have opened. Discard those that have not.
Lower heat to a simmer and add chopped parsley and a slug of EVOO
Serve with toasted bread (and in my case a tomato salad).
