Yucca is one of those plants I’ve had a connection with long before I knew it was edible. I reveled in the every-other-year blooming clockwork of the two yuccas outside of my family’s house in Massachusetts. I shared a silent celebration with them each year that they mustered up the energy to put on a show!! In college I learned of dished in Mexico and the southern us using Yucca blossoms, and the first time I tried them (in a pre-vegan!Alexis omelette) my socks were THOROUGHLY ROCKED. They carry the asparagus family signature earthy savoriness in the stalk and flowers, proving they’re more than a slo-mo firework of landscape interest, they’re a nourishing friend!
