Ingredients: •Whole chicken cut into legs and breast with bones on •One bundle of rosemary chopped •One bundle of thyme •Eight cloves of garlic (I’m gonna do ten next time though) •Salt & pepper to taste • Approx 1/4 cup olive oil (honestly I measured this one with my heart) •1 kilo of potatoes boiled just till a fork can go through. Lisa Haydon Instagram – My take on La Petite Maison’s corn and pomegranate salad. So easy, and cleaned up quick. It all happens in the kitchen… can you hear ?? 

You’ll need: 
•3 cobbs of steamed corn peeled and remove silk 
•1 pomegranate 
• Extra Virgin Olive Oil. About 4 tablespoons. 
•2 tablespoons chopped spring onion 
• half a lemon
•1 tablespoon of white vinegar (I added this later as I felt it needed it) 
• salt and black pepper to taste 

Mix it. Eat it 👅
Lisa Haydon Instagram – English muffin toasted, with ricotta, berries and honey. This was my go to breakfast whenever I’d find myself on a job in Europe. Reminds me of working breakfast in my 20’s… But today this is breakfast for my hub who is finally home from 3 week business trip. And there is no mandated hotel quarantine in Hong Kong anymore. He landed and came straight home. I mean, it’s like we’re in 2019 again🎊.
