Recipe-
Soak one cup quinoa for 15-20 mins
Heat 1 tbsp oil
Add 1//2 tsp asafoetida and cumin
Add chopped garlic and green chilies
Saute just a little and then add 1 medium sized chopped onion. .
Add veggies of your choice. I used green peas and carrot. Cover and cook till it turns soft.
Then add 1 small chopped tomato
1/2 tsp turmeric powder
1 tsp coriander powder
Red chilly powder as per taste
1/2 tsp garam masala
Salt as per taste
Add very little water so that masala doesn’t get burnt.
Now add soaked quinoa and 2 cups water.
Cover and let it cook till quinoa is cooked properly.
And your yummy and healthy masala quinoa vegetable upma is ready! Enjoy!
