Aloo parathas are a fav in our family –
Quick recipe –
Boiled potatoes – 6
Onions – 3 super finely chopped
Green chillies – 2 finely chopped
Pudina and coriander leaves – a handful finely chopped
Ginger – half teaspoon – finely grated
Red chilli powder – as per the spice for your family
Turmeric – 1/4 tsp
Jeera powder – 1 tsp
Garam Masala – 1 tsp
Dhania powder – 1 tsp
Dry mango powder / chaat masala – 1 tsp
Salt to taste
Mix everything well and stuff in the roti and cook!!
Dollops of butter and some fresh curd 😍
