Hand Pies perfect for dinner parties and gatherings 💕 Dough Recipe: Yields 10-12 hand pies 2 ½ cups (325 grams) all-purpose flour 1/2 teaspoon fine sea salt 1 tablespoon sugar, optional 1 cup (230 grams) very cold unsalted butter, cut into 1/2-inch cubes or grated (2 sticks) 4 to 8 tablespoons ice water add all ingredients into a food processor and pulse until the butter is incorporate into the flour looking like crumbly sand , transfer all ingredients into a bowl then add your ice cold water. Using a spatula mix water into flour and use hands to form a ball of dough, cover with plastic wrap and rest in refrigerator for 30 minutes to an hour. Pineapple Filling: yields 6 1 pineapple medium diced,(about 3-4 cups) 1 teaspoons cinnamon 1 teaspoons of cardamom 1 lime zested & juiced Add all ingredients to a medium sauce pan and cook for 15 minutes on medium heat. Let mixture cool to before building pies. Cherry Filling: yields 6 3 cups fresh pitted cherries 1/2 cup cane sugar No cooking required. you can mix the sugar with the cherries together before placing it in center of your mini pies or you can sprinkle sugar on your dough and filling throughout the folding process . Building the pies: divide your dough into 12 smaller f potions equal in size . Flour your flat surface and use a rolling pin to roll out your small hand pies. Add 2 tablespoons of filling to each pie. Fold up the sides pressing down on each of the corners. Once all of your mini hand pies are made, brush them with egg wash and bake at 425 degrees for 20 to 30 minutes until the pie crusts are golden brown.
