Virginia Trioli Instagram – Castagne! Chestnut season is at its zenith, and I never got around to posting the soup I discussed with @mattscravat on @abcinmelbourne a few weeks ago. It’s utterly simple, but so rich and lovely. Ok – so peeling chestnuts is a bitch – do it while they’re hot in the water and wear gloves – but the rest is easy. A few things: * Don’t be tempted to use stock; water is enough. * Check the lemon as you add it – you may not need three tablespoons.
