Judy Joo Instagram – The Best Korean Potato Salad (Gamja Salad) 🇰🇷

Living in the UK has its perks, and one of them is enjoying the wonderfully delicious Jersey Royal potatoes! They’re an absolute treat! 🥔

This Korean twist on the classic potato salad combines the creaminess of mashed or chunky cooked potatoes with the crunch and sweetness of cucumber or apples. It’s a popular side dish, known as a banchan, that adds a delightful touch to any Korean meal. 🥒🍏

Here are some tips to elevate your Gamja Salad:

– Opt for Jersey Royals with the skin on to add texture and nutrients.
– Remove the seeds from the cucumber and dice it for a perfect balance of crunch and creaminess.
– Soak shallots in water to mellow their strong onion flavor.
– Keep the carrots raw and finely dice them for a subtle sweetness and a touch of crunch.
– Choose a high-quality mayo like Kewpie or Hellmann’s for a tangy and creamy dressing. You can also use a canola oil-based mayo if you’re watching your cholesterol.
– Season the boiling water with organic bouillon cubes to enhance the potato’s taste.
– Consider adding fresh summer corn for an extra burst of flavor.
– Ham is also a popular addition to this salad.

For a Mediterranean twist, substitute mayo with extra virgin olive oil and add a dollop of Dijon mustard for an extra flavor kick. It’s not only delicious but also healthier! It’s perfect as a side dish for Korean barbecue or as a scrumptious lunchtime snack.

Judy Joo Instagram – Happy Sunday! 🙌 Perfect time to share a recipe highlight from my @SundayBrunchc4 appearance, where I made my famous Korean Fried Chicken Sandwich– just like the one we sell @seoulbirduk. This is not just a sandwich, it’s an experience. Extra crispy on the outside, and deliciously juicy on the inside. Let me walk you through it. 🍗🇰🇷 

For the chicken precoat:
30g cornflour/starch
2½ tsp sea salt
½ tsp baking powder
Freshly ground black pepper
6 chicken boneless skinless thighs or breasts
Mix together salt, cornflour, baking powder, and  pepper. Toss the chicken pieces in the mixture to cover, shaking off any excess. Place chicken on a wire rack to keep dry. 

For the Batter:
64g cornflour/starch
20g fine matzo meal
30g plain flour
2 tbsp Korean chilli flakes (gochugaru)
1 tbsp sea salt
2½ tsp garlic powder
2½ tsp onion powder
¼ tsp baking powder
90ml vodka
Mix together all of the above ingredients and add just enough cold water to make the consistency like paint, like a thickish slurry.

For the BBQ sauce:
3 tbsp Korean chilli paste (gochujang)
3 tbsp ketchup
2 tbsp dark brown sugar
2 tbsp dark brown soy sauce
1 tbsp toasted sesame oil
2 tsp grated peeled fresh ginger
2 garlic cloves, grated or finely chopped
Mix all of the above together in a small sauce pan, bring to a simmer over low heat, allow to cook over low heat for about 3 mins while whisking (do not let burn). Remove from heat, set aside. 

For the Sandwich:
6 potato buns, split, buttered, and toasted (or pan fried, flat side down)
6 tbsp kewpie mayonnaise
½ head iceberg lettuce
6 slices red onion or tomato
250g cabbage kimchi, diced

Dip the precoated chicken into the wet batter and immediately fry in oil at 350F / 180C. If you want to double fry (extra crispy) do the first fry at 300F/150C, allow chicken to rest then do the second fry at 350F/180C until  bronzed. Spread bun with mayo, place chicken in, slather with bbq sauce, top with lettuce, onion, kimchi, top bun and enjoy.
