David Chang Instagram – A perfect meal:

This picture is from September 2010 at the great restaurant Elkano in Getaria, Spain. A few chefs were in San Sebastian for the Gastronomika conference. This was the last night before we all left and there was an organized dinner at elkano, a restaurant I had heard a lot about as ‘the grilled whole turbot place’. Smart phones and food social media were still in its infancy…so all I knew about elkano was word of mouth and that it was the one of the two epic restaurants you had to eat at outside San Sebastián( the other is etxebarri). 
To be honest I was so full of eating amazing things all week I really just wanted to go to bed early…we were all so stuffed from overeating all week downing everything with goblets of gin & tonics.  I was so happy to be wrong…hoped on a van and we drove about an hour outside of Sebastian to the coastal town Getaria. 

I was also in filming what became mind of chef and tony was there as a speaker and helping produce the show that week.  It was the one night we weren’t filming too. So regretfully I never had any footage. I’ve always wanted at least a photo of this meal…because it was big night like special…it was pure magic…the soup, chuleta, the kokotxas and of course the turbot, blue cheese course…. I was dining with my old boss Daniel Boulud, chef owner of elkano Pedro Arregui, the great Wylie Dufrense and the late Tony Bourdain. The room was packed with friends and my chef heroes.  It was perfect, laughter and epic dinner conversations.  Everyone eating turbot like they were bbq ribs…faces and fingers coated in sherry vin, turbot fat and olive oil. So I was beyond giddy when I saw that journalist @aleforbes recently posted this photo. Finally have a pic of this night. 🙏 

This dinner is the reason when people ask me where would my last meal at a restaurant be…hands down a meal at elkano with some great friends. 🙏 dc Restaurante Elkano
