I was once told if you weren’t nervous on the way to work, you’re doing the wrong thing. I met @bobbyflay for the first time many years ago when we battled on iron chef. Even though I lost the battle, that moment changed my life forever. Fast forward to today, he gave me an opportunity to feel that nervous energy again on triple threat. As we approach our season 2 finale I have to say thank you to Chef Bobby Flay for being a mentor, a friend, and for creating a competition that gives chefs an opportunity to feel what I got to feel on iron chef. I may not be an iron chef, or beaten the OG iron chef, but he chose me to be one of his titans and I’m so grateful for this opportunity. Thank you chef and thank you all for watching….

Lemon curd made with cream cheese instead of butter = lemon curd cheesecake
600g lemon juice
600g sugar
6 eggs
6 egg yolks
8 sheets gelatin
600g cream cheese
2 scraped vanilla beans
Heat lemon juice, vanilla bean, and sugar to 180f, add bloomed gelatin leaves, temper in eggs, cook on double boil until coats a spoon, mix in mixer with cream cheese, pour into fancy cheese shape molds bought from Amazon, freeze, remove from mold, defrost, eat with sauce and fruit and stuff

many many months ago our neighbor gave us a slice of a tree. we thought, let’s try to make a table. as we are not carpenters, and had but a few occasional days home a month to work on it, having this project in between work projects has been an incredible experience. tested and failed at many techniques. Studied, went off recipe, added a little of this, a touch of that and made something pretty rad. ended up with an incredible natural stained table and then didn’t mix the glaze correctly. Then completely messed it all up, then sanded more cause that what you do. Played with some stains, paints, messed up more. Ultimately we layered mistake on top of mistake, learned lessons along the way and created something beautiful in the end…

the avocado is confit in the oven in avocado oil with lots of onion and garlic. The “pit” is a sphere of black garlic vinaigrette
