600g lemon juice
600g sugar
6 eggs
6 egg yolks
8 sheets gelatin
600g cream cheese
2 scraped vanilla beans
Heat lemon juice, vanilla bean, and sugar to 180f, add bloomed gelatin leaves, temper in eggs, cook on double boil until coats a spoon, mix in mixer with cream cheese, pour into fancy cheese shape molds bought from Amazon, freeze, remove from mold, defrost, eat with sauce and fruit and stuff | Posted on 31/Oct/2023 21:10:03
