CANDIED ORANGE HAZELNUT CRUNCH BAR
INGREDIENTS
6 oz dark chocolate, 80% cacao, broken in large pieces
1/3 cup puffed rice cereal
1/4 cup raw hazelnuts, toasted at 350 degrees for 8 minutes, then roughly chopped
Peel of one organic orange, thinly sliced in ribbons
1 cup granulated sugar
Flaky sea salt
Black or pink sea salt, optional
1. Make candied orange: Blanch orange peel ribbons in a pot of boiling water for 8 minutes. Drain and rinse well. Add 1 cup of fresh water and 3/4 cup sugar to the pot and bring to a boil to dissolve. Add orange peel, reduce heat, and simmer until the orange is soft and the liquid is reduced to a thick syrup. Spread remaining 1/4 cup sugar on a piece of parchment paper. Use a fork to transfer the orange ribbons into the sugar and toss to coat. Let air dry.
2. Line an 8×8 pan with a parchment sling. In a heat-proof glass bowl, melt the chocolate in 30-second blasts in the microwave, stirring well in between. Add the puffed rice and stir to combine. Pour into prepared pan. Sprinkle with toasted hazelnuts, candied orange, and sea salt. Chill for at least 30 minutes. Cut into squares.
