Tiyah Mogu Dalir Khar
(Cucumber & Lentil Khar)
Ingredients:
– 1 cup of soaked Mung dal
– 1 cucumber, roughly chopped
– 2/3 cloves of crushed garlic
– 2 green chilies
– 1 teaspoon of methi (fenugreek)
– 2/3 tablespoons of Mustard oil
– 3 tablespoons of khar (alkaline water)
– Salt
Process:
1. Begin by soaking the Mung dal.
2. Next, chop the cucumber.
3. In a kadhai (pan), heat the oil. Add methi and green chilies, then add cucumber and mung dal. Include the crushed garlic and cook for a while.
4. Add salt and khar, then cook again. Finish by adding a few drops of raw mustard oil.
5. Serve with steamed rice.
Khar (alkali) is a traditional food adjuvant of all Assamese people and all the inhabitants of Assam. Natural Khar is prepared by filtering water through the ashes of the pseudostem, corm and fruit skin of a banana named Bhimkol in Assamese (a seeded banana variety). The parts of banana plant are dried under sun.
Fully dried plant parts are burnt and the ashes are collected and filtered with water. The residue collected is Khar. Khar is used to make different types of dishes like fish curry, papaya curry & different types of vegetable dishes etc. Khar is served as a part of the main Assamese meal. According to the belief of indigenous people Khar has also medicinal uses like cleaning stomachs and curing gastric problems etc.
