You know I’m not typically one for crafty foods, I have no patience and don’t find the excitement in them but this was easy enough and honestly, super cute and so doable! I layer brie with some pumpkin butter, wrapped all in puff pastry (the kitchen twine is to help with the shape) brush with egg wash, bake at 400 for like 20ish min the. Allow to cool a few minutes, then remove the twine, add a cinnamon stick in the center and dive in!
Say what you will buy a perfect can of jelly cranberry sauce is down right sexy!! I know you feel me, there are fresh cranberry sauce kind of people and jelly cranberry sauce people and usually the jelly kind come from a can (ain’t nooooooo shame in that!!) but I wanted to share with you my homemade version of it that is absolutely SUBLIME!!!!!! It’s so good it’s unreal truly. I poured mine in an empty can I had but it works perfectly in a lightly greased mason jar. It’s a 10/10, must have!! I’m no southerner (which I know make the best cornbread) but I do know good food or at least, I think I do 😝 but you’re going to have to trust me when I tell you this jalapeño cheddar cornbread is a must with your chilis (more on that tomorrow!) and stews all fall and winter long. Its darn easy too, maybe too easy? Coated in butter and a drizzle of honey while it’s still hot and sizzling so they honey and butter slowly drip into the cornbread and omgggg you’re just not at all ready!! The cornbread recipe is the same one I shared like 10 years ago (do we need an in-depth redo???) and I added cheddar and jalapeños to it and cooked it the same way. Buongiorno and happy Monday! Something about a new week does excite me but I also know it’s not a time for elaborate meals with multiple courses. It’s a busy season of life for most of us and I don’t know about you but I come to really rely on yummy one pan dishes that deliver in both flavor and ease. This one pot creamy chicken and rice is such a fav, my sister often makes it for herself for meal prep and she says it reheats really well (if you’re curious in that sort of thing) it’s just so yum, you can lighten it by using all stock and chicken breast but trust me, you’ll be missing that creaminess and richness (but I like to give you options) serve by itself or with some roasted or steamed veg for a really low effort but high impact dinner with the fam!

I need you to picture this because maybe I’m boring as heck but just imagine a 62 degree day, a pot of soup simmering away, your favorite candle lit in the entryway, afternoon coffee simmering and as dinner time gets closer, you whip up a batch of flaky buttery biscuits that can double as a soup accompaniment or breakfast with a shmear of butter and jam (I would keep them in the Fridge already formed in a closed container and bake them fresh in the morning, it’s as easy as opening up a can but oh so much better!) I know someone’s grandma makes better biscuits (because any mom and grandma’s cooking will always always always be better than ours) but these are dang on delish! Caio e pepe Brussel sprouts is pretty much the only way I want to eat them right now. So crunchy, salty and peppery, literally the best thing you can make with them and i promise you, even the pickiest eaters will give these a try! I simply toss brussel sprouts with olive oil, salt, pepper and some garlic and herb seasoning, place them cut side down on a baking sheet liner with parchment and generously covered in freshly grated parm, pop them in the oven at 400 for 20ish min and when they come out, peel them from the baking sheet, dowse with more parm and oh so much pepper! Buongiorno! Here’s the thing, potatoes for me are their own food group and I’m pretty sure I’ve never had a potato dish I didn’t like😂 these melting potatoes are simply sensational!! Cut the potatoes into thick disks, Pat them dry really well the heavily salt and pepper them and sear them in a mix of olive oil and butter. Once seated on both sides, add some cracked garlic cloves and some rosemary (or thyme) along with enough stock to come about half way up the potato and throw them in a 400 degree oven until cooked through, should only take 15 min. This is the one!! This is the best chili ever! No it’s not brisket braised turned into chili but just a proper home chili that’s simmered low and slow and turned into absolute magic!! I’ve heard from MANY of you that said you won prizes at food festivals making this and I believe it! Only difference I do from the original recipe is I add chili beans instead of regular plain beans because I did it by accident once and never looked back!! Buongiorno beautiful people!! Let’s do another little nibble that you can serve any time for any occasion. Marsala roasted pears (slice a couple pears and drizzle with about a Tbsp of oil and Marsala, pinch of salt and some fresh thyme, roast at 400 for 15ish min. Slice some bread, drizzle that with some oil and toast it along side the pears. Whip together some Boursin (Gorgonzola or goat cheese also work great here) 4oz of cream cheese, 1/4 cup of soup cream and a drizzle of good oil (add a splash of milk if you want it thinner) then top your toasted bread with that, followed by the roasted pears, add a bit of prosciutto (the sweet, creamy and salty is just 😮💨😮💨😮💨) a few leaves of arugula and drizzle the whole thing with some hot honey. My cold foam PSL always hits especially at this time of year when you still don’t want to put down your cold drinks but need that spiced cozy vibe! It’s a PSL that actually tastes SOOOO good and not like potpourri 😂 that syrup is everything and lasts for ever on the fridge!! Call me crazy and pleaseeeeeeeeee don’t cancel me for this!! But, green bean casserole is just not my favorite thing on the Thanksgiving table. Buon pomeriggio my beautiful peeps!! I wanted to share this easy roasted honey nut recipe I’ve made more times than I can count and it’s just so easy but the balance of sweet, spicy and crunchy just get me every single time!! Halve and hollow out some honey squash (any squash works for this by the way) plop them on a lined baking sheet, oil and heavily salt the cut side, turn them over and roast at 400 about 40 minutes depending on the side or until super soft, then flip them over, drizzle a tad bit of maple syrup and stick them under the broiler for a minute to caramelize them.
While those roast fry up lotsssss of shallots and red pepper flakes in some neutral oil until golden brown, then remove the shallots with a slotted spoon on a paper towel lined plate (reserve the oil to cook with or use on anything!) when ready to serve top the squash with the crispy chili shallots, toasted almonds (or pecans ) some parsley and another drizzle of maple syrup or hot honey. Unbelievably YUM!! I promise!!
