SoooO.. in this recipe, I use the inspiration of French onion soup 🄣 Capturing its soul hugging capability šŸ¤— Starts by caramelizing onions, then deglaze with sherry wine, added in beef stock and cooked down to a beautiful, rich gravy.. ALSO- I had ground beef in the freezer so made some meatballs... but even more ALLLSO- had some string cheese, so stuffed the meatballs with cheeeez Japanese sweet potato mash rounds out this meal of comfort... and I absolutely love food like this because it's relatively inexpensive & pretty simple to make if you have patience to fill the meatballs individually. Ground beef was $12 [16oz] Stock was homemade [so basically free] 1 onion $.65 Homegrown thyme 1 bay leaf Couple tablespoons of sherry wine [and I tossed the cheese in a little cornstarch before filling the meatballs] A few sticks of string cheese $.40ea Cooked the stuffed meatballs in the broiler, in the French onion soup base, which took like 6 mins roughly. I got about 16 meatballs out of the pound of meat Finished with a little parm, arugula & blk pepper
