Motichor laddu 🪔
Ingredients:
1 cup besan (gram flour)
1 cup water
Ghee/oil for deep frying
2-3 cups sugar
1 cup water
Saffron strands (optional)
Cardamom powder (optional)
Rose water 1tsp
Watermelon seeds
Ghee 1tbsp
Chopped nuts (almonds, pistachios) for garnish
Instructions:
Make the batter: Mix besan with water to make a smooth, runny batter.
Fry the boondis: Heat ghee/oil in a flat, perforated ladle. Pour batter through the ladle to make tiny boondi balls. Fry until they’re golden. Remove and drain excess oil.
Prepare sugar syrup: Boil sugar with water to make a syrup (one-string consistency). Add saffron and cardamom powder to the syrup.
Soak the boondis: Add the fried boondis to the sugar syrup. Let it sit for around 10-15minutes to absorb the syrup. Add watermelon seeds& ghee and give it a good mix. Let it cool for another 5mins.
Shape the laddus: Once the mixture cools down a bit, take small portions and shape them into laddus. Use a light hand to press and shape them.
Garnish: Garnish the laddus with chopped nuts.
Remember, making Motichoor laddu might take some practice to get the perfect texture and shape. Adjust the sugar consistency and frying time according to your preference. Enjoy making this delightful Indian sweet!

Fashionable Fried Chiroti🤣 #happydiwali 🪔
Chiroti
3 cups maida
1 cup rava
1 cup rice atta/flour
1 cup ghee
1 tsp vanilla essence / elaichi powder
1.5 cups coarsely ground sugar
A pinch salt
Oil or ghee to fry.
Combine maida, rava, salt, 3 tbsp ghee , vanilla essence and water and knead stiff atta. Keep aside for 20/30 minutes with a wet cloth.
Knead again and make 6 balls. Roll out medium rotis.
Combine rest of the ghee and rice atta. Whisk well.
Place one roti on flat surface. Apply 1 tablespoon ghee/rice flour mix all over it. Place another one and apply again. Continue till all the rotis are done.
Then roll into one tight, long roll. With a sharp knife, cut 3/4 inch pieces.
Place each piece sideways and flatten with your fingers into a puri shape.
Fry in medium hot oil or ghee. One or two at a time. Give it space and keep pouring hot oil into each centre for even cooking. Keep stirring. Once a side browns slightly, flip and fry the other side.
Remove and sprinkle sugar while it is hot. You can add powdered elaichi ( if not used the vanilla essence in dough )
This stays for 15 days easily.
