Kerala Idiyappam Veg Stew🍲kids❤️it!

Veg stew 🍲
2 tbsp coconut oil 2 cloves / lavang 1 inch cinnamon
2 pods cardamom
½ onion, sliced few beans, chopped
½ carrot, chopped
½ potato, cubed
peas / matar
cauliflower florets
2 green chilli, slit ( optional)
ginger, & garlic
1 cup water
salt
2 cup thick coconut milk
in a large kadai heat coconut oil and saute cloves, cinnamon and cardamom.
add onion and saute slightly
add veggies -saute for a minute.
add water, salt and few curry leaves. mix well.cover and boil for 5 minutes or till vegetables are half cooked.now add coconut milk and mix well. cover & boil till vegetables is cooked completely.
Note: ( you can avoid the garlic which I add in almost all my dishes )
Idiyappam
Rice flour ( lightly roasted )
Hot water boiled with 2 tsp oil
Salt
Coconut grated garnish
Add the hot water mix in small parts to rice flour to make a firm yet soft dough. It’s steamy so be careful while kneading it . Make a tube shape and insert it into the Idiyappam maker . Fix the cap tight and squeeze out to make the iddys on a well oiled idly maker tray .
Steam well in the idly maker and serve hot with coconut grated on top !

Sweet Shankarpalli
4 cups maida
1 cup sugar
1 cup ghee
1 cup water
Mix the sugar, ghee, water on a low flame till it all dissolves.
Add it to the maida and knead a semi soft dough. Keep aside for 20 minutes.
Roll out into a large medium thick roti. Fold it into three parts horizontally. Then three parts vertically. It should be a square. Roll out into a square. Trim out thin edges and cut small squares.
Deep fry on a medium flame. Dust with sugar and serve.
