Ingredients: 

Filling: 
5 Granny Smith apples, peeled and chopped into bitesize chunks 
1 tablespoon sugar
1 tablespoon corn starch 
½ teaspoon ground cinnamon

Topping:
2 cup rolled oats
1/2 cup almond flour
1/2 cup chopped walnuts or pecans
1tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp fine sea salt
1/3 cup maple syrup
1/3 cup coconut oil, melted, plus more for baking dish
Honey, coconut yoghurt or ice cream to serve 

Method:

1. Preheat the oven to 180C. Smear a little of the coconut oil in a baking dish.
2. In a large bowl, toss together the apples, sugar, corn starch, and cinnamon.
3. Pour the apple mixture into the baking dish.
4. In the same bowl as you made your apples add the oats, almond flour, nuts (if using), cinnamon, ginger, and salt. Add the maple syrup and coconut oil and rub together until it looks like a crumble consistency .
5. Spread the oat topping evenly over the apples then make for 30 minutes or until the top is golden. This makes the apples soft but not a sauce, cook for longer if you’d prefer a saucy consistency.
