Every morning my BIJI woke us up by saying – RAM RAM.
And when I used to call her from US & say – PAARIPAANA (I bow & touch your feet), she would always say – Jiyunday Raho (stay blessed).
How much I miss her voice. ❤️
All my culture-traditions of India came from her.
She was the only person who stood by me to choose cooking and listen to my heart.
Without her support, a kid from a small town would have never dreamt sooo big.
For me, it was all about winning the top awards in the World to honor her.

Jan 15th, 2010 I submitted UTSAV – A Culinary Epic of Indian Festivals to Bloomsbury Publishing.
I remember taking 2400 pages of research-recipes-images-notes to the London office in 2 big suitcases.
Nothing in history of cookbooks anything like this was conceived or created before. 1,200 pages of India’s celebrations. And showed the first copy to @virsanghvi at Leela, Delhi.
The book was launched at Cannes Film Festival, India Pavilion. France.
And later custom made copies were presented to

I swear this is going to be your next favorite chocolate cake.
You do not temper the chocolate, it means with the warm butter. And also adds texture to the cake.
– 1 cup high-quality dark chocolate
– 1 cup unsalted butter (2 sticks)
– 3/4 cup granulated sugar
– 4 large eggs
– 1 teaspoon vanilla extract
– 1/2 cup all-purpose flour
– Pinch of salt
Instructions:
1. Preheat your oven to 350°F (180°C). Grease a square cake pan and line it with parchment paper.
2. Melt the butter using a microwave for 2 mins on high and pour it over sugar. Add the chocolate and mix well.
3. Add vanilla extract, eggs and whisk until the mixture becomes light and fluffy.
5. Sift in the flour and add a pinch of salt, then fold until just combined. Be careful not to overmix.
6. Pour the batter into the prepared cake pan with parchment paper and tap on the counter for a smooth top.
7. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs.
8. Allow the chocolate cake to cool in the pan before transferring it to a serving plate.

I’ve been a passionate photographer for almost 2 decades in New York.
Actually the first image I ever shot was of Vikas & the rose ice cream bowl he made for James Beard Foundation.
Today we shot some cover shots in New York.
The world knows Vikas as a “renissance man” or “the most influential Indian chef in the World” or “hottest chef in New York” or “People Magazine’s sexiest man alive” or “the most recognizable face of Indian cuisine” but for me he is just simple Vikas who travelled from Amritsar to America with a dream.
I’ve worked with him for about years & learnt so many life lessons from him the most important being – NEVER GIVE UP.
