DeVonn Francis Instagram – Omelette, tinned fish, blanched greens

2 eggs
2 tbsp olive oil (for cooking eggs and dressing greens)
1-1/2 cups broccoli rabe and collards (50% of both)
kosher salt
2 teaspoons lemon juice
1/2 teaspoon garlic powder
a handful of red onion sliced thin
2 pc canned gar fish (I used Minnow World)
1/2 tbsp kewpie mayo
4 grams chili oil

Beat eggs—eggs coagulate slowly in nonstick in olive oil low temp. swirling uncooked yolk in the pan to keep the omelette thin and crepe-like.

Blanch greens quickly in salt water (squeeze excess water once removed from pot) > throw greens into a bowl with red onions, pinch of salt, garlic powder, lemon juice, chili flakes, oil. Mix.

Transfer omelette to plate, plate gar fish and dress fish with chili oil.

Add dollop of kewpie and place greens salad over the mayo.
