From a homeless shelter to selling food on the streets of NY to being broke so many times to closing restaurants to failed books……. to a big announcement on Feb 3rd.
So many broken gaps were filled by your love & support everyday. You all helped me survive & thrive.
Someone once commented who knew the BIG struggle I was facing & said, “When you win, India wins. Just keep going.”
Your love helped me create a cultural bridge between India & the U.S.

Yesterday was my Papa’s Birthday.
And I kept thinking about him all day.
In 2002, he visited me in New York & at that time I was selling food on the streets of New York in Tribeca. I know that he was heartbroken of see me starting from the very bottom.
It’s been a long journey to represent Indian Cuisine on the highest scale & dignity in North America.
I hope he will be proud to watch @bungalowny being created.
I hope he is blessing us to represent our culture to the World.

In our lounge, we have a small library that will celebrate our culinary literature with ancient cookbooks in native languages & ofcourse India’s most celebrated Chefs & cookbook authors, documentarian’s & journalists.
In honor of all those who came before us & laid the foundation to those who will take our cuisine ahead.
Bungalow is committed to celebrate all that we are.
Our first cookbook has to be the Iconic Chef @sanjeevkapoor’s Khana Khazana.

As a ritual since 1990, I also take my chef coat to be blessed by the divine.
I could be opening a restaurant in any part of the World, this tradition remains constant.
I feel that there is a higher power that guides us.
For me restaurant is a representative of our culture & ancestors. Cooking gets passed on from generation to generation.
I took a pilgrimage to the most majestic & beautiful temple I’ve ever visited outside India. It is a man made wonder & a marvel. They also have one of the best vegetarian food I’ve had in America. ❤️

Today I went to Mrs. Sabharwal for blessings for BUNGALOW NEW YORK.
When I came to the US, I started working in small Indian restaurants & banquets right away.
From cleaning homes to running errands to cat sitting to cooking in homes…..I did it all.
But technically my first employer was Mrs. Sabharwal.
About 24 years ago she gave me $101 while working in her home & blessed me that “one day May you cook for the Presidents.”
This stayed with me forever.
I never used the money until I had to get admission at Culinary Institute of America at a summer course.
I waited for years to use her $101.
Since that day, I seek her blessings for every new project I begin.
I remember that on Oct 4th, 2011 when I received my first Michelin Star, I visited her next morning for blessing.
She was happier than me & told me, “India won today.”

Hi I’m Rashmi uday Singh former IRS commissioner turned qualified journalist & food writer past 3 and a half decades. I feel blessed to have known Vikas Khanna for over 2 decades.
You may know him as one of the first Indian Chefs to be awarded a Michelin Star, or the host of most popular MasterChef or the author of 40+ books or the man who created Feed India during pandemic to serve 80 Million meals (sorry in my excitement I said 80million people ♥️) in India….the list goes on.
But for me he is a wonderful caring friend an inspiration who has turned all setbacks into comebacks and is all set to do so again.

This miracle flower is known as ‘yogavahi’ in Ayurveda as it acts as a catalyst for other herbs taken with it. Its antioxidant properties are anti-inflammatory as well as supporting immunity and brain health.
Our Spice Series will take you on a journey of the spices used at Bungalow; from the importance to our history as well as to our health and cuisine, we will spotlight these miracle ingredients and all they have to offer.

1. The window is an integral element that forms part of the logo, as well being symbolic throughout the space.
It’s a reflection of Indian culture being represented in New York.
2. The Hindi of “101” is my favorite part. Ek Sau Ek.
In Indian culture generally gifts are given in ONES such as 51, 101, 1001.
My grandmother used to say that ONE symbolizes that the gift will grow and bring prosperity known as BARKAT.
3. The motif on the logo is a bud that will blossom by our love & care.
Shaila has given so so many such motifs through the design of Bungalow. Can’t wait to share it with you all.
