Check out this week’s episode with @wguidara – author of “Unreasonable Hospitality” and American Restauranteur. Available now on YouTube / Apple / Spotify — “You know, you’ve succeeded in navigating tension between two factions when both are a little bit excited and a little bit frustrated.” — Most ambitious people are good salespeople, and when you’re a good salesperson, it’s a blessing and a curse, because what you can inadvertently do is sell people on an idea that they’re not actually that excited about. They just fell for your sales pitch, and then you have people excited to join you on something, and then. But they’re really not right. And so you’ve ended up with not the best team, whereas if you extend an invitation, people can always RSVP know. It’s a very subtle thing, but there’s actually a material difference in how you approach something. And so it was, “hey, this is where we’re going. We are going to be the best restaurant in New York,” and then we are going to be very ambitious in our goal setting. So for the group that didn’t want to change, they’re like, ugh, this sounds hard. And we are going to be very patient in our pursuit. We’re going to take this one step at a time. We’re going to bring people along for the ride. We’re not going to change everything all at once. We’re going to do this incrementally, yet consistently over time. Which, to the other group that wanted everything right away, they’re like, did they end up being probably more frustrated? I think both sides. Both sides equally. Which, by the way, you know, you’ve succeeded in navigating tension between two factions when both are a little bit excited and a little bit frustrated.
I’m often asked whether it’s possible to extend unreasonable hospitality at scale… if in a big company with thousands of team members (serving exponentially more customers) whether it’s a reality to provide consistent and thoughtful graciousness to the people you serve. And yes, I firmly believe it is. Of course, fostering a culture of empowerment, where everyone on the team is encouraged to imbue the experience with their own kindness and creativity is the ultimate destination- but even before you get there, it IS possible to systemize hospitality into your operations. It’s just a matter of doing some simple pattern recognition- and bringing some creativity and intention to those recurring moments. Still so touched by Shauna Niequist’s message of gratitude to restaurants and restaurant workers. She shared her love letter from the Welcome Stage and attendees were able to send a copy to someone they think needed to hear it most. Couldn’t have imagined a better message, especially sharing it now in the full swing of the holiday season.
If you’ve never worked in a restaurant, Pre-Meal is the meeting that we have with the team right before we open the doors and start serving our guests. When done well, it’s when the people you work with cease being a collection of individuals and come together as a trusting team, unlocking the collective creativity and capacity required to accomplish the most audacious goals. I believe it’s the most important 30 minutes of the day, the ultimate culture creator, and it’s one of the things I miss most about owning a restaurant… which is why I started this newsletter.
