Judy Joo Instagram – I don’t know any Korean or actually Asian person who does not love rice. It is a staple in our diet, and when we ask someone if they have eaten, we literally ask them “have you had rice?”. Served with every meal (even breakfast), rice is the “bread” of Asia and one of my comfort foods. When I was feeling ill, my mom used to make me a soothing rice porridge, and my afterschool snack was a roasted barley tea poured over a bowl of rice, studded with cubes of pan fried spam, kimchi and seaweed flakes. Rice is life in Asia (there have even been rice riots), and an essential part of our lives.
I have been already buying Arirang Rice, which is grown in California, so I was happy to collaborate with them. It is the perfect rice for a variety of dishes, especially Korean favorites. Here, I’m using their medium-grain Calrose rice to whip up a sensational Steak Bibimbap.
Just cook Arirang Rice as you would any other rice. Rinse the grains under cold water, and then pop into your rice cooker with water, and let technology take over. I always use a rice cooker, it just knows when it’s done, such a smart appliance! 🙂 The outcome? Fluffy, perfectly cooked rice that’s a delight on its own or as part of any meal. I love the smell of freshly cooked rice…fills my kitchen and my soul with comfort.
This rice also absorbs flavors very well, and complements the boldness of the gochujang sauce in dishes like bibimbap. The rice also adds a delicious contrast of texture alongside the beef and veggies. And, it crisps up nicely on the bottom of the stone bowl, adding some much welcomed and totally addictive crunch. I used to wait next to the rice cooker as a child pleading with my mom to scrape up the “nurungi” crispy rice on the bottom of the bowl… and then smack on the pieces joyfully.
