**Before anyone says anything not ALL people in Okinawa Japan live to be 100 but they do have one of the largest centenarian populations. This is due to their lifestyle, the way they grow their food and what they consume. BUT purple sweet potatoes are a very large part of their diet.
Ok so we have been using purples sweet potatoes a lot here! purple sweet potatoes have a lot going for them nutritionally. In addition to antioxidants, they are packed with fiber, vitamin C and potassium, which can help with weight loss, immunity and heart health.
They are rich in fibre and vitamin A, as well as vitamin C, B2, B6 and E.
went to make tortillas but ended up with pancakes!! 🥞
1 cup mashed purple potatoes
1/2 cup cassava flour
1 tbs melted butter or coconut oil
1/4 tsp sea salt
Cook the sweet potato: Start by cooking the purple sweet potato until it’s soft. You can either bake it in the oven or microwave it until it’s fully cooked. Once it’s done, let it cool and then peel off the skin.
2. Mash the sweet potato: Place the cooked sweet potato in a bowl and mash it until smooth. You can use a fork or a potato masher.
3. Mix the ingredients: In a large mixing bowl, combine the mashed sweet potato, cassava flour, salt, and melted butter. Mix the ingredients together until a dough forms. You may need to adjust the amount of cassava flour slightly depending on the moisture content of the sweet potato.
4. Knead the dough: Turn the dough out onto a clean, lightly floured surface and knead it for a few minutes until it becomes smooth and cohesive. If the dough is too sticky, you can add a little more cassava flour.
5. Divide and roll the dough: Divide the dough into several small balls. On a lightly floured surface, roll each ball into a thin round tortilla using a rolling pin. Make sure to dust the surface and rolling pin with cassava flour to prevent sticking.
6. Heat a non-stick skillet over medium heat. Once hot, place a rolled-out tortilla onto the skillet and cook for about 1-2 minutes on each side, or until lightly browned and cooked through. Repeat with the remaining tortillas.

Ingredients:
– Yukon Gold mini potatoes
– Olive oil
– Salt
– Malt vinegar
Instructions:
1. Preheat your oven to 450
2. Place the mini potatoes in a large pot and cover them with cold, salted water. Bring to a boil and cook until the potatoes are tender but still firm, about 15-20 minutes.
3. Drain the potatoes and let them cool and dry them as best as possible (I let mine sit for about 30 min)
4. Drizzle a baking sheet with olive oil. Place the potatoes on the baking sheet and, using a potato masher or the bottom of a glass, gently press down on each potato until it is about ½ inch thick.
5. Drizzle a little more olive oil over the smashed potatoes or spray them with either avocado or olive oil then sprinkle them with salt.
6. Roast the potatoes in the preheated oven for 20-25 minutes, or until they are crispy and golden brown.
7. Remove the potatoes from the oven and transfer them to a serving platter. Drizzle with malt vinegar and sprinkle with additional salt if desired.

This is high protein, comforting and delicious.

Ingredients:
For the broth: (or you can used boxed – I did bone broth here
– 8 cups water
– 1 onion, halved
– 4 cloves garlic, smashed
– 1 piece of ginger (about 2 inches), sliced
– 1/2 cup gluten-free white miso paste
– 2 tablespoons gluten-free soy sauce or tamari
– 1 tablespoon sesame oil
– 1 tablespoon rice vinegar
– Salt and pepper to taste
For the ramen bowl:
– Gluten-free ramen noodles
– Gluten-free unfried chicken (or protein of choice such as tofu, shrimp, or sliced beef)
– Broccoli, chopped into florets
– Corn kernels (fresh or frozen)
– Green onions, sliced
– Sesame seeds for garnish
– Optional: Soft-boiled or jammy eggs sliced
Instructions:
1. In a large pot, combine the water, onion, garlic, and ginger. Bring to a boil, then reduce the heat and let it simmer for 30-40 minutes to allow the flavors to meld.
2. While the broth is simmering, prepare your gluten-free unfried chicken according to the package instructions. If using tofu, you can pan-fry it until crispy. Set aside.
3. In a small bowl, whisk together the miso paste, gluten-free soy sauce, sesame oil, and rice vinegar until smooth. Set aside.
4. Once the broth is ready, remove the onion, garlic, and ginger pieces with a slotted spoon and discard.
5. Stir the miso mixture into the broth. Taste and adjust seasoning with salt and pepper as needed. Keep the broth warm over low heat.
6. In a separate pot, cook the gluten-free ramen noodles according to the package instructions. Drain and set aside.
7. In the same pot, blanch the broccoli florets and corn kernels in boiling water for 2-3 minutes until they are tender-crisp. Drain and set aside.
8. To assemble the ramen bowls, divide the cooked noodles among serving bowls. Top with the gluten-free unfried chicken, blanched broccoli, and corn kernels.
9. Ladle the garlic miso broth over the noodles and toppings.
10. Garnish with sliced green onions, sesame seeds, and optional soft-boiled eggs if desired.

High Protein Vegan Yellow Solit Pea Soup 🍜
This soup is so good my husband who’s not really into soups, grabbed this for lunch today. ON HIS OWN!!!
Would you eat this? Tastes just like corn chowder
1 tablespoon extra-virgin olive oil or avocado oil
1 yellow onion, chopped
2 stalks celery, diced
3 cloves garlic, minced
6 cups vegetable broth or chicken broth if not vegan
1 cup yellow split peas
1 medium Yukon gold potato, peeled and chopped
Kernels from 4 ears corn, about 2 1⁄2 cups (I used frozen)
3 ⁄4 teaspoon smoked paprika or regular if you don’t want Smokey taste
1 teaspoon sea salt, more to taste
3 ⁄4 cup unsweetened coconut milk
1 1/2 tablespoons apple cider vinegar but u can leave out of you don’t have.
Sautee everything but the peas and garlic in olive or avocado oil.
Add in garlic after a few minutes then add broth and lentils
Cover and simmer for about 20 minutes
Add in coconut milk and let simmer for anywhere up to 3 hours. I find the soup tastes great after 45 min to an hour, but the longer it simmers the softer the peas get and that’s how we prefer it. More like a stew.

AIRFRIED SWEET POTATOES 🍠 This is such an old recipe of mine that I’ve never shared because It was always just my boring sweet potatoes but literally everyone who tries them freaks over them so decided to finally share! My kids love them too, we go through a lot of them a week over here.
Do you prefer sweet or regular potatoes?
Measure everything with your heart. I put a ton of seasoning!
Salt & pepper
Garlic powder
Onion powder
Olive oil or avocado oil
Toss everything together and air fry at 375 or 400 for about 18 minutes depending on your air fryer.

Superfood Glluten Free skillet brownie!! High fiber, no refined sugar if you leave out the chocolate chips, high in antioxidants and potassium. Enjoy any time of day! It’s so good!!

3 lripe bananas
1 3/4 cups gluten free rolled oats
1/4 cup ground chia seeds
1/4 cup cacao powder
2 tsp vanilla extract
1 cup milk of choice (I used @kikimilkco)
2 eggs 1 egg white
Chocolate chips
Add everything but the chocolate chips to a blender.
Transfer to cake pan and bake for about 25 min at 350.
Let cool before eating so you don’t burn yourself like I did.

I love strawberry cake but it’s hard to find gluten free strawberry shortcake. I just thought, what if I whipped a bunch of things in the blender, could it work? And it did!! I do wish it was pinker but you won’t get that unless you use food dye. I tried everything lol.
What’s your fav cake? Would you make this GF cake? You can also use AP flour.
Here’s the recipe:
2 cups frozen strawberries
– 1 1/2 cups gluten-free flour
– 1/2 cup maple syrup
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 cup plant-based milk (such as almond, soy, or oat milk) you can also use regular
– 1/4 cup melted coconut oil or other neutral oil
– 1 teaspoon vanilla extract
– A pinch of salt
– 1 egg
– 1 tablespoon lemon juice
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set it aside.
2. In a small bowl, combine the frozen strawberries and lemon juice. Toss to coat the strawberries with the lemon juice.
3. In a blender, combine the lemon-coated frozen strawberries, plant-based milk, and maple syrup. Blend until the strawberries are pureed and the mixture is smooth.
4. In a large mixing bowl, combine the gluten-free flour, baking powder, baking soda, and salt. Whisk to combine.
5. Add the egg, strawberry mixture, melted coconut oil, and vanilla extract to the dry ingredients. Stir until just combined. Be careful not to overmix.
6. Pour the batter into the prepared cake pan and spread it out evenly.
7. Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
8. Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
By incorporating lemon juice into the recipe, you can help prevent browning and also add a hint of citrus flavor to the cake.

6-8 bone-in, skin-on or boneless skinless chicken thighs
– 4-5 cloves of garlic, minced
– 1 tablespoon garlic powder
– 1 tablespoon onion powder
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1/4 cup olive oil
– Juice of 2 lemons
– Zest of 1 lemon
– 1/4 cup unsalted butter, cut into pieces
– 1 lemon, thinly sliced
– Fresh parsley, chopped (for garnish, optional)
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, prepare the marinade by combining the minced garlic, garlic powder, onion powder, salt, pepper, olive oil, lemon juice, and lemon zest. Mix well.
3. Place the chicken thighs in a large bowl or a resealable plastic bag. Pour the marinade over the chicken, making sure each piece is well coated. Massage the marinade into the chicken, then cover and refrigerate for at least 30 minutes, or ideally up to 4 hours to allow the flavors to meld.
4. Once the chicken has marinated, transfer the chicken and the marinade to a baking dish. Arrange the chicken thighs in a single layer, then pour any remaining marinade over the top. Place lemon slices on and around the chicken, and distribute the pieces of butter evenly over the top of the chicken.
5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
6. After 30 minutes, remove the foil and continue to bake for an additional 20-25 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C) when tested with a meat thermometer.
7. Once the chicken is cooked through, remove the baking dish from the oven. Allow the chicken to rest for a few minutes. Sprinkle with chopped parsley for garnish, if desired.

Make this tomorrow!! Creamy cheesy gluten free orzo! This whips up super fast but nobody would ever know!

1 cup gluten-free orzo
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons tomato paste
1/2 can of coconut milk
1 cup bone broth (chicken broth or vegetable)
1 cup cherry tomatoes, halved
1 cup mozzarella cheese
Salt and pepper to taste
Fresh basil for garnish (optional)
Instructions:
1. Cook the gluten-free orzo according to the package instructions. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add cherry tomatoes the minced garlic and sauté for 1-2 minutes until fragrant.
3. Stir in the tomato paste and cook for another 1-2 minutes, stirring constantly.
4. Pour in the coconut milk and bone broth, stirring to combine. Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing it to thicken slightly.
5. Add the cooked orzo to the skillet, stirring to coat everything in the creamy sauce. Let it simmer for an additional 2-3 minutes.
6. Stir in the mozzarella cheese until it melts and the sauce becomes creamy. Season with salt and pepper to taste.
7. Once the cheese is melted and the orzo is coated in the creamy sauce, remove the skillet from the heat.

I finally did it! After 4 tries I MADE A GLUTEN FREE ARTISAN BREAD!🥖
It’s not like my high protein bread. The texture is like bread bread.

Ingredients:
– 3 cups gluten-free all-purpose flour
– 1 teaspoon salt
– 1 teaspoon instant yeast
– 1 1/2 cups warm water
– 1 tablespoon honey (optional, for a touch of sweetness)
– 1 tablespoon olive oil
– Additional flour or cornmeal for dusting
Seasoning like everything but the bagel
Instructions:
1. In a large mixing bowl, combine the gluten-free all-purpose flour, salt, and instant yeast.
2. In a separate bowl, mix the warm water and honey (if using) until the honey is dissolved.
3. Gradually pour the wet ingredients into the dry ingredients, stirring as you pour. Mix until well combined. The dough will be sticky and wet.
4. Cover the bowl with plastic wrap and let it sit at room temperature for about 1-2 hours, or until the dough has risen and has a few bubbles on the surface. The rising time may vary depending on the temperature in your kitchen.
5. Preheat your oven to 450°F (230°C). Place a Dutch oven or a heavy oven-safe pot with a lid into the oven as it preheats.
6. Once the oven and pot are preheated, carefully remove the pot from the oven. Sprinkle a little flour or cornmeal on the bottom of the pot to prevent sticking.
7. Scrape the gluten-free bread dough from the bowl onto a piece of parchment paper. Shape the dough into a round loaf, using wet hands to prevent sticking. Place the parchment paper with the dough into the preheated pot.
Top with seasoning of choice. I did everything but the bagel.
8. Cover the pot with the lid and bake for 30 minutes. Then, remove the lid and continue baking for an additional 10-15 minutes, or until the bread is golden brown.
9. Once the bread is baked, carefully remove the pot from the oven and transfer the bread to a wire rack to cool.

I can’t believe I’ve never had this before!!! Well I guess I can, most Mapu Tofu is made with pork and I don’t eat pork but I made it with ground turkey and this was chefs kiss!!!! 💋 👩🏻🍳 SOOOO GOOD!!!! – 1/2 lb ground turkey

– 2 tablespoons soy sauce
– 1 tablespoon maple syrup
– 3-4 green onions, chopped (for garnish)
– 2 tablespoons olive oil or avocado oil for cooking
Instructions:
1. Heat the olive oil or avocado oil in a large skillet or wok over medium heat.
2. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
3. Once the turkey is cooked, add the minced ginger and garlic to the skillet and cook for about 1 minute, until fragrant.
4. Add the miso paste, soy sauce, and maple syrup to a bowl and stir together then add it to combine with the turkey, ginger, and garlic.
5. Carefully add the cubed tofu to the skillet and gently stir to combine with the turkey mixture, being careful not to break the tofu cubes.
6. Let the Mapo Tofu simmer for about 5-7 minutes, allowing the flavors to meld and the tofu to heat through.
7. Once the dish is ready, garnish with chopped green onions.
8. Serve the Mapo Tofu hot over steamed rice or with kelp noodles for a gluten-free option.
