This is due to their lifestyle, the way they grow their food and what they consume. BUT purple sweet potatoes are a very large part of their diet.
Ok so we have been using purples sweet potatoes a lot here! purple sweet potatoes have a lot going for them nutritionally. In addition to antioxidants, they are packed with fiber, vitamin C and potassium, which can help with weight loss, immunity and heart health.
They are rich in fibre and vitamin A, as well as vitamin C, B2, B6 and E.
went to make tortillas but ended up with pancakes!! 🥞
1 cup mashed purple potatoes
1/2 cup cassava flour
1 tbs melted butter or coconut oil
1/4 tsp sea salt
Cook the sweet potato: Start by cooking the purple sweet potato until it’s soft. You can either bake it in the oven or microwave it until it’s fully cooked. Once it’s done, let it cool and then peel off the skin.
2. Mash the sweet potato: Place the cooked sweet potato in a bowl and mash it until smooth. You can use a fork or a potato masher.
3. Mix the ingredients: In a large mixing bowl, combine the mashed sweet potato, cassava flour, salt, and melted butter. Mix the ingredients together until a dough forms. You may need to adjust the amount of cassava flour slightly depending on the moisture content of the sweet potato.
4. Knead the dough: Turn the dough out onto a clean, lightly floured surface and knead it for a few minutes until it becomes smooth and cohesive. If the dough is too sticky, you can add a little more cassava flour.
5. Divide and roll the dough: Divide the dough into several small balls. On a lightly floured surface, roll each ball into a thin round tortilla using a rolling pin. Make sure to dust the surface and rolling pin with cassava flour to prevent sticking.
6. Heat a non-stick skillet over medium heat. Once hot, place a rolled-out tortilla onto the skillet and cook for about 1-2 minutes on each side, or until lightly browned and cooked through. Repeat with the remaining tortillas.
