Here’s how to make it: - 1 block (14 oz) firm tofu, cut into small cubes - 1/2 lb ground turkey - 1 tablespoon fresh ginger, minced - 3 cloves garlic, minced - 2 tablespoons miso paste I used half cup - 2 tablespoons soy sauce - 1 tablespoon maple syrup - 3-4 green onions, chopped (for garnish) - 2 tablespoons olive oil or avocado oil for cooking Instructions: 1. Heat the olive oil or avocado oil in a large skillet or wok over medium heat. 2. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon as it cooks. 3. Once the turkey is cooked, add the minced ginger and garlic to the skillet and cook for about 1 minute, until fragrant. 4. Add the miso paste, soy sauce, and maple syrup to a bowl and stir together then add it to combine with the turkey, ginger, and garlic. 5. Carefully add the cubed tofu to the skillet and gently stir to combine with the turkey mixture, being careful not to break the tofu cubes. 6. Let the Mapo Tofu simmer for about 5-7 minutes, allowing the flavors to meld and the tofu to heat through. 7. Once the dish is ready, garnish with chopped green onions. 8. Kelly Kruger Instagram – I finally did it! After 4 tries I MADE A GLUTEN FREE ARTISAN BREAD!🥖 

It’s not like my high protein bread. The texture is like bread bread. 

Who’s trying this? Or just easier to buy it? 

Ingredients:
– 3 cups gluten-free all-purpose flour
– 1 teaspoon salt
– 1 teaspoon instant yeast
– 1 1/2 cups warm water
– 1 tablespoon honey (optional, for a touch of sweetness)
– 1 tablespoon olive oil
– Additional flour or cornmeal for dusting
Seasoning like everything but the bagel 
Instructions:
1. In a large mixing bowl, combine the gluten-free all-purpose flour, salt, and instant yeast.

2. In a separate bowl, mix the warm water and honey (if using) until the honey is dissolved.

3. Gradually pour the wet ingredients into the dry ingredients, stirring as you pour. Mix until well combined. The dough will be sticky and wet.

4. Cover the bowl with plastic wrap and let it sit at room temperature for about 1-2 hours, or until the dough has risen and has a few bubbles on the surface. The rising time may vary depending on the temperature in your kitchen.

5. Preheat your oven to 450°F (230°C). Place a Dutch oven or a heavy oven-safe pot with a lid into the oven as it preheats.

6. Once the oven and pot are preheated, carefully remove the pot from the oven. Sprinkle a little flour or cornmeal on the bottom of the pot to prevent sticking.

7. Scrape the gluten-free bread dough from the bowl onto a piece of parchment paper. Shape the dough into a round loaf, using wet hands to prevent sticking. Place the parchment paper with the dough into the preheated pot.
Top with seasoning of choice. I did everything but the bagel.
8. Cover the pot with the lid and bake for 30 minutes. Then, remove the lid and continue baking for an additional 10-15 minutes, or until the bread is golden brown.

9. Once the bread is baked, carefully remove the pot from the oven and transfer the bread to a wire rack to cool.

Kelly Kruger Instagram – Make this tomorrow!! Creamy cheesy gluten free orzo! This whips up super fast but nobody would ever know! 

Would you make this one? I finally found a gluten free orzo and am excited to make soup with it too! 

1 cup gluten-free orzo
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons tomato paste
1/2 can of coconut milk
1 cup bone broth (chicken broth  or vegetable)
1 cup cherry tomatoes, halved
1 cup mozzarella cheese
Salt and pepper to taste
Fresh basil for garnish (optional)

Instructions:

1. Cook the gluten-free orzo according to the package instructions. Drain and set aside.

2. In a large skillet, heat the olive oil over medium heat. Add cherry tomatoes the minced garlic and sauté for 1-2 minutes until fragrant.

3. Stir in the tomato paste and cook for another 1-2 minutes, stirring constantly.

4. Pour in the coconut milk and bone broth, stirring to combine. Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing it to thicken slightly.

5. Add the cooked orzo  to the skillet, stirring to coat everything in the creamy sauce. Let it simmer for an additional 2-3 minutes.

6. Stir in the mozzarella cheese until it melts and the sauce becomes creamy. Season with salt and pepper to taste.

7. Once the cheese is melted and the orzo is coated in the creamy sauce, remove the skillet from the heat.

garnish with fresh basil if desired.
