Cook the gluten-free orzo according to the package instructions. Drain and set aside. 2. In a large skillet, heat the olive oil over medium heat. Add cherry tomatoes the minced garlic and sauté for 1-2 minutes until fragrant. 3. Stir in the tomato paste and cook for another 1-2 minutes, stirring constantly. 4. Pour in the coconut milk and bone broth, stirring to combine. Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing it to thicken slightly. 5. Add the cooked orzo to the skillet, stirring to coat everything in the creamy sauce. Let it simmer for an additional 2-3 minutes. 6. Stir in the mozzarella cheese until it melts and the sauce becomes creamy. Season with salt and pepper to taste. 7. Kelly Kruger Instagram – I can’t believe I’ve never had this before!!! Well I guess I can, most Mapu Tofu is made with pork and I don’t eat pork but I made it with ground turkey and this was chefs kiss!!!! 💋 👩🏻‍🍳 SOOOO GOOD!!!! I had it with rice for dinner and the next day over kelp noodles for lunch and I’m salivating right now even writing about it. 

As always, gluten free with no refined sugar. 

Have u tried this dish or made it? Would you? What’s your favorite type of cuisine? 

Here’s how to make it: 
– 1 block (14 oz) firm tofu, cut into small cubes
– 1/2 lb ground turkey
– 1 tablespoon fresh ginger, minced
– 3 cloves garlic, minced
– 2 tablespoons miso paste I used half cup 
– 2 tablespoons soy sauce
– 1 tablespoon maple syrup
– 3-4 green onions, chopped (for garnish)
– 2 tablespoons olive oil or avocado oil for cooking

Instructions:
1. Heat the olive oil or avocado oil in a large skillet or wok over medium heat.
2. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
3. Once the turkey is cooked, add the minced ginger and garlic to the skillet and cook for about 1 minute, until fragrant.
4. Add the miso paste, soy sauce, and maple syrup to a bowl and stir together then add it to combine with the turkey, ginger, and garlic.
5. Carefully add the cubed tofu to the skillet and gently stir to combine with the turkey mixture, being careful not to break the tofu cubes.
6. Let the Mapo Tofu simmer for about 5-7 minutes, allowing the flavors to meld and the tofu to heat through.
7. Once the dish is ready, garnish with chopped green onions.
8. Serve the Mapo Tofu hot over steamed rice or with kelp noodles for a gluten-free option.

4 tbs ground flax 
1/4 tsp baking powder 
1 egg 
*add salt 

Bake at 350 for about 15 minutes or you can microwave for 90 seconds I just don’t like the microwave personally.
