Ingredients:
1 tbsp coriander seeds
1 tbsp cumin seeds
2-3 pieces of black and green cardamom
1-2 sticks of cinnamon & 4-5 pieces of cloves
2 bay leaves
1 onion, finely chopped
1 whole garlic, minced
2 tbsp cumin seeds
Whole black pepper
250 grams minced chicken
Salt to taste
1/2 cup yogurt
1 bowl vegetable stock
100 grams soaked rice
Brown onions (for garnish)
Green chilies (for garnish)
Chopped coriander leaves (for garnish)
Method:
In a pan, boil water with coriander seeds, cumin seeds, black and green cardamom, cinnamon sticks, cloves, 1 whole garlic, 1 piece of onion, and bay leaves, and boil for a few minutes until fragrant.
Cook for another 15 minutes on medium flame.
Now take a pan and add saute onion, then add 1 tbsp cumin and whole black pepper.
Add the minced chicken to the pan and mix well. Cook until the chicken is cooked.
Season the chicken with salt according to taste.
Add yoghurt and stir well and cook for 4-5 minutes on low heat, keep stirring occasionally.
Pour in the vegetable stock and add the soaked rice. Mix well.
Cover the pan and let the pulao cook for about 15 minutes on low flame until the rice is cooked through and the liquid is absorbed.
Once done, garnish the pulao with brown onions, green chilies, and chopped coriander leaves.
Serve hot and enjoy your delicious Chicken Keema Pulao!
