Vikas Khanna Instagram – CEREMONY OF AROMAS. 
– Ingredients at Bungalow. 

I love picking up or sourcing ingredients from the very origins sometimes. 
It is challenging, but we are trying our best to showcase the diversity of Indian soil, water, character & flavors from across the country. 

Here is our 5 rose varieties. 
1. Damask Rose variety from Lucknow, sweet & complex. Best for spice mixes & smoking. Great for making Gulkand (rose spread) we use at Bungalow for Kulfi. 
2. Nothing in the World can compare to the native mature roses from Kannauj (the perfume capital of India). 
It has layers of sweetness & full body earthy flavors. Some popular variety I used in my perfume was Panneer rose or Rose Edouard. 
3. Pink rose buds from Amritsar. The very mild flavor is good to complement stocks with floral undertones. Mostly used for making rose water & sherbets. 
4. Nothing compares to the Desi rose buds of Kashmir. Though several varieties are grown there, I think we have Dhar rose or Bulgir. FYI, these are the varieties that are used to extract oil in Pulwama. The velvety petals are unique as they contain great amount of rose oils. Amazing for teas & skincare (just for info 🙈). 
5. These rare roses were brought from Karnataka, but the vendor didn’t know where they were grown. Their unique appearance & aroma is very strong & traditionally used for ceremonies & medicine.

Vikas Khanna Instagram – This year, Holi is arriving a little early in New York. 
As we open the doors of Bungalow on Mar 23rd, we celebrate Holi with a dish called “RANG”. 
A dish is inspired by my novel-movie, THE LAST COLOR featuring legendary @neena_gupta 

The story was based on a single theme, “Spring symbolizes love as it brings colors in our lives”. 
This project supported thousands of widows around the World through @globalwidows @sulabh.international 

This beautifully crafted dish became even more precious when @pardeepkumar_arts drew it. ❤️

So here is a dish to love, colors & spring. And auspicious beginnings.
