My favorite soup! A bunch of people have asked, and I’m finally posting the recipe! Chop onions, carrots, & celery. Put into a heated pot with some oil and cook til the onions start to turn translucent. Add a bunch of minced garlic, and a tablespoon or tomato paste and 2 tablespoons of fresh minced rosemary. Sauté until aromatic (a minute ish). Then add 4 cups of chicken broth (or water and bullion like me), and bring to a boil! Set the soup to simmer and put a lid on for 15-20 minutes til the veggies are tender. While that cooks, take some ground Italian sausage and make cute little meatballs in another pan and once those are ready toss em in the pot. Chop up a bunch or 2 of kale and toss that in too! Then a can of white beans, and finish it off with a tablespoon ish of apple cider vinegar. I also threw in a bay leaf, and salt & pepper to taste. And there you have it. Let me know if you make it!

Last year we spent the better part of 4 months in Missouri renovating a house. It was quite an adventure, a learning experience, and exactly what my heart needed. More than it showing us that we really can do anything we put our mind to, it burst my heart wide open to be so loved and supported by my friends & family while growing a baby in my womb. Sunday dinners, cutting down walls, building decks all with my family, and having Cassius spend so much time with the Marzolfs is something I’ll never forget and something I am so grateful for. I guess I just want to say, if you want something, you can do it, you can make it happen, create the life you want and it might even feel more amazing than you ever imagined. 2023, we fixed up a house, started growing a baby, and healed my heart a whole lot. ♥️♥️♥️ @dirkmai @kiwimiwi P.S. I did a terrible job documenting this process. So many projects & special moments not captured in my phone. And that’s okay. 🙂
Where did the time go? I’m getting ready to start the journey all over again with this new baby, and reflecting on how far Cassius and I have come, it’s mind blowing. To everyone who has little ones… hold them tight, cherish every moment. Because it really does go by in a flash.
