Christina Tosi Instagram – #bakeclub Gooey Carrot Bars, part two: the GOO

Bake Club: Gooey Carrot Cake Bars
Makes 9 squares (or more! Depending on how you cut)

Cinnamon Crumbs
4 tablespoons butter, melted
3 tablespoons sugar
3 tablespoons light brown sugar

½ cup   1 tablespoon flour 
¾ teaspoon cinnamon
¼  teaspoon salt

Heat oven to 325F. In a small bowl, toss butter and sugars together until smooth. Stir in dry ingredients and mix until small clusters form. Spread clusters evenly on a greased sheetpan and bake at 325F for 20 minutes. Cool completely

Cheesecake Filling
6 ounces cream cheese
½ cup sugar

1 ea egg yolk
½ teaspoon vanilla
Pinch salt

Heat oven to 350F. Grease am 8×8-inch baking pan and set aside.
In a small bowl, mix cream cheese and sugar together until stiff and smooth. Mix in egg yolk, vanilla and salt until smooth and fluid. 
Sprinkle ¾ of the cooled cinnamon crumbs across the bottom of the greased baking pan to cover the surface (reserving the remaining ¼ cup for later). Spread the cheesecake filling atop the surface of cinnamon crumbs. Set aside.

Carrot Cake Filling
1 stick butter, melted
½ cup sugar
½ cup light brown sugar

1 ea egg

1 cup flour
¾ teaspoon salt
¾ teaspoon cinnamon
¼ teaspoon baking powder
¼ teaspoon baking soda

1 cup finely shredded carrots (1 large carrot)

In a medium bowl, mix butter and sugars together and stir until smooth. Add egg and mix until smooth. Add dry ingredients and mix just to combine. Stir in finely shredded carrots stirring as little as possible. Spread the carrot cake filling evenly atop the cheesecake layer. Sprinkle the remaining ¼ cup of cinnamon crumbs atop.
Bake at 350F for 40-45 minutes or until the bars puff and caramelize at the edges, remaining slightly jiggly in the center, they are meant to be gooey, afterall!
Cool completely before slicing into 3 rows of 3.
