But that meal, for me, is LUNCH! 🍽️ ⏱️I’ve been doing Internittent Fasting for 30 years! My MORNING HEALTHY AGING ROUTINE: 🌅I wake up ☀️get outside to get early morning light in my eyes. 🍵drink a thermos full of green tea. 🥶take a cold plunge 🚨A little red light therapy 🏋️♀️Exercise on an empty stomach 🥗THEN I eat as many colorful plants as I can for LUNCH around 1pm. Here is what I made for my next 3 lunches.. MIXED VEGGIE STIR FRY: 2 tablespoons olive oil 1/2 white onion 4 cloves garlic 3 stalks broccoli chopped 2 stalks celery sliced 1-2 cup asparagus chopped 1-2 cup green beans 1 cup mushrooms sliced 3 carrots sliced Dash of low sodium soy sauce 1/2-1 container firm tofu cut into cubes. Directions: Stir fry the harder vegetables on medium heat with olive oil for about 10 minutes, maintaining the crunchy texture as they will be reheated for the next few days. Add mushrooms and tofu. Cook 5 more minutes. Add soy sauce and cook a few more minutes.
