– 4 cups cooked frozen rice, thawed
– 2 cups frozen mixed veggies (such as peas, carrots, corn)
– 1 cup broccoli florets
– 2-3 tablespoons avocado oil
– 1-2 tablespoons butter
– 2 eggs, beaten
– 1 tablespoon rice vinegar
– 2-3 tablespoons soy sauce or tamari
– 1 tablespoon sesame oil
– 2-3 cloves garlic, minced
– Salt and pepper to taste
– Optional: sliced green onions for garnish
