Ingredients:
For shrimp broth
-2 celery sticks
-1 tomato
-1 medium carrot
-1 onion
-2 garlic cloves
-1/2 yellow bell pepper
-1/2 orange bell pepper
-1 bunch of cilantro or Recao
-1lbs shrimp shells
-salt & pepper to taste
-Seafood seasoning to taste
-8 cups of water
Boil for 20 minutes
For soup:
-1 1/2 cups of rice
-1/2 red bell pepper
-2 garlic cloves
-Sofrito
-Shrimp paste
-1 lbs 31-40 size shrimp
PS. You can replace the aceite de Achiote for Extra Virgin olive oil. Just add some Sazón ❤️ La cantidad que te diga tú corazón

Ingredients:
-8 boneless/skinless chicken thighs
-1 tbsp Salt
-1/2 tbsp pepper
-1 tbsp garlic powder
-1 tbsp ground oregano
-1 tbsp Webber Kickin’ Chicken
-1 tbsp curry powder
-1 tbsp paprika
-1/3 cup bitter orange
-1/2 cup of chicken broth
-8-9 Sweet/ Riped Plantains (cook in airfryer for 30 minutes, flipping at 15 minutes)
-garlic
-onion
-Any cheese 🧀 All the cheese 🧀 mozzarella and cheddar preferably
-2 eggs to bond together
Assemble Pastelón and cook in the oven at 350, uncovered, for 40 minutes #pastelon #dinner #dinnerideas

Ingredients:
– 1 spiral-cut ham (about 5-7 pounds)
-7-8 guajillo Chiles
-3 tbsp Achiote powder
– 1 cup pineapple juice
– 1/2 cup orange juice
– 1/4 cup chicken stock
– 1/4 cup honey
– 2 tablespoons olive oil
-1 bay leaf
-1 chicken bouillon
-1 onion
– 3 cloves garlic
– 2 teaspoons ground cumin
– 2 teaspoons paprika
– 1 teaspoon chili powder
– 1 teaspoon dried oregano
– Salt and pepper to taste
-1 large pineapple
– Kingsford charcoal
Instructions:
1.In a skillet, place guajillo chiles and achiote powder with some olive oil to blister until fragrant.
2. In a blender , combine pineapple juice, orange juice, chicken stock , honey, garlic, onion, cumin, paprika, chili powder, oregano, salt, and pepper. Mix well to create the marinade.
3. Place the spiral-cut ham in a large resealable plastic bag or a shallow dish. Pour the marinade over the ham, making sure it’s evenly coated. Seal the bag or cover the dish with plastic wrap, and refrigerate for at least 4 hours or overnight, turning occasionally to marinate evenly.
4. Prepare your grill for indirect cooking using Kingsford charcoal. Light the charcoal and let it burn until the coals are covered with a light ash.
5. Remove the ham from the marinade and reserve the marinade for basting. Place in a skewer plate with pineapple. Cover well with aluminum foil. Place the ham on the grill over indirect heat.
6. Close the lid of the grill and cook the ham for about 15-20 minutes per pound, basting with the reserved marinade every 30 minutes, until the internal temperature reaches 140°F (60°C) for fully cooked ham or 160°F (71°C) for cook-before-eating ham.
7. Once the ham is cooked to your desired temperature, remove it from the grill and let it rest for 10-15 minutes before slicing.
8. Enjoy your Spiral Honey Ham Al Pastor and serve with your favorite sides or use it in sandwiches or tacos for a delicious meal.
