How people see bread in the US is absolutely different than how people see bread abroad. Take this with a grain of salt because it’s just my opinion, but we see bread as a lowly vessels or means to an end to get our proteins into our mouths. I’m looking at you avocado toast lover. But it’s so much more than that. The same way that we view Mother sauces in cooking, we should be viewing yeasty breads like brioche, flatbreads, quick bread (cornbread), Leavened (sourdough) breads and beyond. We have a whole aisle dedicated to bread in our grocery stores and yet we still don’t value bread as an art form. I grew up in a very Latin household that valued pan sobao and pan de agua as delicacies. Now in my household, we value baguettes, brioche, pan sobao and pan de agua as our champs! What are your thoughts? Should we change how “America” sees and values bread? Or does That open up another can of worms? Like the fact that we don’t respect pastries and baked goods like they do in other countries. As a pastry chef my favorite thing to make is soft serve. Making my own bases has been something I’ve loved tinkering with. Soft serve machines are annoying and built on the 13th floor of purgatory lol but I still love them. For the most part, most of my SS were vegan bases with a bounty of fruits. Occasionally I’d venture into the world of lactose cause creamy things are god tier lol. There’s so many combinations and things that I haven’t even wrapped my taste buds around yet. I dream of a day that I can hear the stupid shake of a soft serve machine. Would you try chestnut spread? – Back home and back to baking! Yesterday I made 3 recipes in 1 day but because the internet would banish me into the underworld if I posted all three at once I have to wait to share them with you! I’ve been thinking a lot about brioche lately, not the little storefront/restaurant yall want me to make but just about brioche in general lol so I’ll be playing a lot with it in the next few weeks. For this brioche I indented it and filled it with creme de Marron aka chestnut spread that I smuggled all the way from France lol. My hubby and I saw that folks were highly recommending that we bring this back & we did, we bought mini’s to try before we committed to opening the big can. I’m glad we listened to the internet haha re-influenced✨ – I loved how fluffy this turned out, and the spread is delightful. Though I enjoy it more “raw” than baked. 🥲 I would 100/10 make this again, but maybe an egg yolk wash and pearl sugar added instead of a milk wash and granulated sugar. – Oh! And before you ask for a recipe! This base brioche recipe will be in my upcoming cookbook. So truly, I wish I could share, but now you have something too look forward to as I keep sharing what I do with just 1 recipe from my book. (Maybe if I can get my act together and hire a content creator/editor I can show yall how to use my book to make spinoff recipes?
