Paola Velez Instagram – Would you try chestnut spread?

Back home and back to baking! Yesterday I made 3 recipes in 1 day but because the internet would banish me into the underworld if I posted all three at once I have to wait to share them with you!
I’ve been thinking a lot about brioche lately, not the little storefront/restaurant yall want me to make but just about brioche in general lol so I’ll be playing a lot with it in the next few weeks.
For this brioche I indented it and filled it with creme de Marron aka chestnut spread that I smuggled all the way from France lol. My hubby and I saw that folks were highly recommending that we bring this back & we did, we bought mini’s to try before we committed to opening the big can. I’m glad we listened to the internet haha re-influenced✨

I loved how fluffy this turned out, and the spread is delightful. Though I enjoy it more “raw” than baked. 🥲
I would 100/10 make this again, but maybe an egg yolk wash and pearl sugar added instead of a milk wash and granulated sugar.

Oh! And before you ask for a recipe! This base brioche recipe will be in my upcoming cookbook. So truly, I wish I could share, but now you have something too look forward to as I keep sharing what I do with just 1 recipe from my book. (Maybe if I can get my act together and hire a content creator/editor I can show yall how to use my book to make spinoff recipes? Like a gift that keeps on giving)
