Chalo iss pardes ne kam se kam yeh toh sikha diya hai ki gahoon main kabhi zaika tha hi nahin. Rootiyon ki woh mithaas woh mere Maa kay haath ki thi. Living in the foreign land has taught me atleast this much that there is no flavor in the flour. The sweetness of the breads came from my Maa’s hands.

Chhena jhili (Odia: ଛେନାଝିଲି) is a popular dessert from cuisine of Odisha, India. Its birthplace is Nimapada in Puri district. It is prepared in fried cheese and sugar syrup. The man who started preparing this sweet was Aarta Sahoo from the Shyam Sundarpur Village of Nimapara.

And when I used to call her from US & say - PAARIPAANA (I bow & touch your feet), she would always say - Jiyunday Raho (stay blessed). How much I miss her voice. ❤️ All my culture-traditions of India came from her. She was the only person who stood by me to choose cooking and listen to my heart. Without her support, a kid from a small town would have never dreamt sooo big. For me, it was all about winning the top awards in the World to honor her. Maa was honored with “Our Pride Award” by the most amazing principal. Mrs. Daljit Kaur. She also gave me a beautiful spice box for @bungalowny And we also met Mrs. Urmila Khairah (Maa’s first English Professor) Maa was overwhelmed by so many memories of her youth. And we all recreated an image on the same staircase in the college where she graduated from. ❤️❤️❤️

Vikas Khanna Instagram - CTC pickle aka Carrot-Turnip-Cauliflower was one of the aromas of winters for me. Every Punjabi home has their own version, but I love this recipe. Tip- 1. Roasting cumin, fennel & mustards seeds is crucial for the smoky flavor. 2. Cooking ginger-garlic paste separately & then adding it to softened onions is a better technique. 3. Deglazing the pan with vinegar (I used apple cider vinegar for a little floral note) 4. No need to cook the vegetables. Just add them into the onion mixture & mix well. Cover & let it cook without heat. It helps in more crunchy texture. 5. Transfer it in a clean jar & let it sit in the Sun for at least 3 to 4 days (if you are patient enough).

Nothing in history of cookbooks anything like this was conceived or created before. 1,200 pages of India’s celebrations. And showed the first copy to @virsanghvi at Leela, Delhi.
