These are the eggs that I grew up on… just in time for the weekend. I love eggs in all forms, but this might be my favorite. Crispy Eggs Serves 1 3 fresh eggs ¼ cup olive oil 2 tbl grated parmesan cheese Salt & pepper to taste Chili crunch (optional) Heat fry pan until hot. Add olive oil to pan, continue to heat until it is shimmering. Crack the eggs into the hot oil. Baste the top of the eggs with the hot oil as the bottom begins to get crispy. Continue to cook until the top of the eggs are cooked and the bottoms are crispy and brown. Transfer to a plate, grate fresh parmesan cheese on top. Chili crunch can be added for spice and texture. Enjoy.
