Trust me, it’s delicious!!! #seasontotaste Spiced Crispy Celeriac on Yogurt Flatbread Serves 2 Ingredients 1 celeriac 1 tbsp olive oil 1 tsp cornflour 1 tsp mixed spice 1 tsp cumin Flatbread 200g self raising flour 200g greek yogurt Yogurt Dressing 2 tbsp greek yogurt 1 tbsp honey/agave syrup ½ tsp mixed spice ½ tsp cumin To serve (optional) Salad leaves Mixed seeds Balsamic glaze Method Peel and chop the celeriac into 3cm chunks. Place in a pan of boiling water and a pinch of salt and cook for 6-7 minutes then drain. While the celeriac is boiling, make the dough. Mix the flour and yogurt together with a generous seasoning of salt and pepper to form a soft dough. Knead for a minute then form into a ball and set aside to rest for 5 minutes. Make the dressing by mixing the ingredients together in a bowl until combined. Make the bread by slicing the dough in half and roll each half out on a floured surface into a circle roughly ¼ inch thick. Heat a frying pan with a drizzle of olive oil, once hot add the dough and cook for 3 minutes then flip and cook the other side for a further 3 minutes. Cook until each side is golden brown and the bread is cooked through. Repeat with the other half of the dough. Place the drained celeriac in a bowl and drizzle over the olive oil. Mix. Combine the cornflour, mixed spice and cumin then sprinkle over the celeriac and mix well to coat. Heat a drizzle of olive oil in a pan, once hot add the coated celeriac and cook for 10-15 minutes until crispy on the outside and tender on the inside. Place flatbread on a serving dish. Spread over half the dressing, top with salad leaves and the crispy celeriac. Spiced Crispy Celeriac on Yogurt Flatbread
Serves 2
Ingredients
1 celeriac
1 tbsp olive oil
1 tsp cornflour
1 tsp mixed spice
1 tsp cumin

Flatbread
200g self raising flour
200g greek yogurt

Yogurt Dressing
2 tbsp greek yogurt
1 tbsp honey/agave syrup
½ tsp mixed spice
½ tsp cumin

To serve (optional)
Salad leaves
Mixed seeds
Balsamic glaze

Method
Peel and chop the celeriac into 3cm chunks. Place in a pan of boiling water and a pinch of salt and cook for 6-7 minutes then drain.
While the celeriac is boiling, make the dough. Mix the flour and yogurt together with a generous seasoning of salt and pepper to form a soft dough. Knead for a minute then form into a ball and set aside to rest for 5 minutes.
Make the dressing by mixing the ingredients together in a bowl until combined.
