The latest instalment in my seasonal recipe series are these Apple Crumble Cookies which are ridiculously delicious, I should be humble but I just can’t with these, they really are superb and crumbly and yummy😍 If you thought the Apple Crumble Cake was good, have a gander at these beauties 🍎#seasontotaste
Ingredients
Cookies
125g unsalted butter, softened
250g biscoff spread
125g golden caster sugar
175g light soft brown sugar
1 large egg
275g self raising flour
25g custard powder (optional)
½ tsp salt
2 red apples, cored and chopped
Crumble coating
75g self raising flour
50g unsalted butter, chilled and cubed
50g granulated sugar
50g rolled oats
1 tsp cinnamon
1 tbsp Demerara sugar
Method
1. Oven on to 180°C fan/ 200°C. Line 2 baking trays with parchment.
2. Make the crumble. In a mixing bowl, rub the butter into the flour until it resembles breadcrumbs then mix through the sugar, oats and cinnamon.
3. Make the cookie dough. Beat the butter, biscoff spread and sugars until light and fluffy.
4. Add the egg into the butter mixture and beat until combined.
5. Add the flour, custard powder and salt then gently mix until combined. Add the chopped apple and mix until just combined.
6. Break off a brussel sprout size piece of cookie dough and roll into a ball. Place each ball of dough in the crumble to coat. Place on the parchment and top with extra crumble. Sprinkle over the Demerara sugar.
7. Bake for 15 minutes until golden brown. Enjoy!

🐣Easter Egg Cheesecakes 🐣 These are epic!!! No baking involved, super quick to make and will definitely impress the family! Enjoy 💕
Makes 4
Ingredients
2 Easter eggs
5 chocolate digestive biscuits
75g unsalted butter, melted
200g cream cheese
75g icing sugar
125ml double cream
½ teaspoon vanilla extract
Handful mini eggs, crushed
30g dark chocolate, melted
Separate the Easter eggs into halves and pop in the freezer for 5 minutes to harden up. Bash the biscuits up using a rolling pin. Add to a bowl. Add the melted butter to the biscuits. Mix. Retrieve the Easter egg halves and add a few tablespoons of the biscuit mixture to each half then press down into the base carefully. Place in the freezer while you make the cream cheese mixture. Add the icing sugar to the cream cheese and mix to combine. Whisk the double cream and vanilla in a bowl to soft peaks. Fold the cream cheese into the whipped cream. Pour the cream cheese mixture over the biscuit bases in the egg halves. Place in the fridge for a few hours or overnight to chill. Drizzle over the melted chocolate and sprinkle on some crushed mini eggs.

Ingredients
320g carrots, grated
100g pecans, chopped
100g raisins
300g plain flour
2 tsp bicarbonate of soda
2 tsp ground cinnamon
1 tsp allspice
1 tsp ginger
1 tsp salt
300ml vegetable oil
4 large eggs
1 tsp orange extract
200g golden caster sugar
200g light brown sugar
Icing
150g cream cheese
100g icing sugar
2 tbsp lemon juice
Decoration
Crushed pecans
Orange zest
Method
1. Oven on to 180C fan/200C. Liberally grease and flour a bundt tin.
3. In a bowl, add the oil, eggs, orange extract and sugars. Mix well to combine.
4. In another bowl, add the flour, bicarb, cinnamon, allspice, ginger and salt. Whisk to combine.
5. Tip the oil mixture into the flour mixture. Mix until smooth. Add the grated carrots, nuts and raisins. Mix again then pour into the prepared tin. Bake for 1h10 until a skewer comes out clean. Leave for 10 minutes then tip onto a cooling rack.
6. Make the icing. Mix all the ingredients together until smooth then drizzle over the cake. Sprinkle over the crushed pecans.

Briony’s Chopped Filling Sandwich
Half red pepper, 5 cherry tomatoes, handful spinach, handful rocket, 1/2 avocado, handful edamame beans. Yogurt dressing = 2 tbsps Greek yogurt, 1tsp smoked paprika, 1 tsp cumin, 1 tbsp honey all mixed together.

Kicking off the week with this Rhubarb Streusel Tart! Side note…how have I never made streusel before?!? It is SO GOOD!!! This latest installment in my super series of seasonal recipes is gorgeous to look at and tastes fab, definitely something to impress your family and friends. Ingredients
Pastry
225g self raising flour
120g unsalted butter, chilled
Pinch of salt
50g golden caster sugar
1 egg, beaten 1 egg for egg wash
Frangipane
100g unsalted butter, softened
100g golden caster sugar
2 eggs
150g ground almonds
75g plain flour
1 tsp cinnamon
1 tsp ground ginger
400g fresh rhubarb
Streusel
170g self raising flour
100g light soft brown sugar
70g golden caster sugar
25g custard powder
100g salted butter, melted
Method
Oven on to 180C fan/200C. Make the pastry. Cut the butter into small cubes then place in a food processor with the flour and salt. Pulse until the mixture resembles bread crumbs (you can do this by hand, just rub the flour and butter together). Stir through the sugar then add the egg and mix together until it forms a soft dough. Cover and place in the fridge for 20 minutes. Make the streusel topping. Place the flour, sugars and custard powder in a bowl then whisk to combine. Pour over the melted butter (it should be warm not hot) and fold gently with a fork until you can’t see any more flour. Don’t overmix, as soon as the flour is incorporated, stop mixing. Place on a baking tray lined with parchment paper and bake for 15 minutes until golden brown. As soon as you take the streusel out of the oven, break it up using a metal spoon so you have a crumbly topping.Retrieve the pastry and roll out on a floured surface to a ¼ inch thickness. Line a 20cm tart tin with the pastry and prick the base with a fork. Scrunch up a piece of parchment paper then unfold it and place it in the pastry case then fill up with uncooked rice or baking beans. Bake for 10 minutes…

Now these cookies are something else!!! Peanut Butter, Chocolate and Fennel…yes fennel! I came up with the combo when prepping for the Bake Off recipes and trust me when I say they are next level delicious 🤤 I made over 100 of these for people to taste this weekend at the @royalbathandwest Food and Drink Festival and they went down an absolute treat!!! You can swap out the peanut butter for biscoff spread (or do half and half!) and leave the fennel out if you want (but they taste amazing with it!). Enjoy!!! ❤️
Peanut Butter, Chocolate Chip and Fennel Cookies
Ingredients
125g unsalted butter, softened
250g chunky peanut butter/biscoff spread
125g golden caster sugar
175g light soft brown sugar
1 large egg
300g self raising flour
1 tsp salt
1-2 tsp crushed fennel seeds
250g dark chocolate chips
Method
1. Oven on to 180°C. Line 2 baking trays with parchment.
2. Butter, peanut butter and sugars in stand mixer with paddle attachment. Beat until well combined.
3. Egg and milk in a mug and beat with a fork until combined. Tip into butter mixture and beat till combined.
4. Flour, bicarb, baking powder, salt and crushed fennel seeds in a bowl. Whisk to combine.
5. Tip flour mixture into butter mixture and gently mix until combined. Add choc chips and mix until just combined.
6. Break off a brussel sprout size piece of cookie dough and roll into a ball. Place on parchment and press down to flatten.
7. Bake for 8-10 minutes until they are just hardening. Put on cooling rack.
The dough will last in the fridge for a week and the freezer for 2 months.

I was lucky enough to whip up some delicious flapjacks recently with ‘Bee Kind’ honey from 2 hives thriving on the rooftop of the @kyocera_document_solutions_uk Reading HQ 🍯 They are incredibly proud of their hives and produce jars a year that they hand out to their customers, partners and visitors. These flapjacks are a true celebration of honey with honeycomb made with honey and honey in the flapjacks. Plus they are super easy to make 🐝 You can find the full recipe below to make your own using the honey of your choice ❤️
HONEY FLAPJACKS
Ingredients
Flapjacks
225g unsalted butter
225g light soft brown sugar
170g honey
450g rolled oats
Honeycomb
130g golden caster sugar
75g honey
Pinch of salt
½ tsp bicarbonate of soda
To finish
50g dark chocolate, melted
Method
Oven on to 180°C fan. Grease and line a 30cm brownie tin. Make the honeycomb by heating the sugar, honey and salt in a pan until the mixture is bubbling and reaches 145°C (use a jam thermometer). Remove from the heat and stir through the bicarbonate, the mixture will bubble. Pour the honeycomb onto a sheet of parchment and leave to set for 5 minutes until hardened then bash into small pieces. Heat the butter, sugar and honey together in a pan until melted then mix through the oats. Stir through the broken up honeycomb then pour into the prepared tin. Bake for 25-30 minutes. Drizzle over the melted chocolate then leave to cool.
