A worthwhile 3 month project: Chamomile Fennel Bitters These herbal, floral bitters bring depth and harmony to all sorts of gin cocktails. Or add to soda water for a soothing digestif. A great holiday gift 🌼 From @frankiesolarik’s book THE BAR CHEF CHAMOMILE FENNEL BITTERS Makes about 25 oz (740 mL) INGREDIENTS 750 mL London dry gin 17 g dried organic chamomile flowers 15 g fennel seeds 1 5-inch piece of dried licorice root 10 g whole green cardamom pods 1. In a glass jar with a tight-fitting lid, combine chamomile, licorice root, cardamom pods, and fennel seeds and top with gin. Seal tightly and shake to mix well. Set aside at room temperature, away from sunlight, for 3 months to allow the flavors to thoroughly infuse the gin. Strain through a fine mesh strainer, cheesecloth, or a coffee filter. Will keep indefinitely. SATSUMA FIZZ with CHAMOMILE HONEY Makes one cocktail INGREDIENTS 1 tangerine or Satsuma orange, sliced in rounds 1 oz Honey Chamomile Syrup (recipe below) 1 oz gin Sparkling water 6 dashes of Chamomile Fennel Bitters Make simple syrup: Dissolve 1/2 cup honey in 1/2 cup boiling water and add 2 bags of chamomile tea. Cover and let steep for 10 minutes. Remove tea bags. Place 2 slices of tangerine at the bottom of a highball glass. Add Honey Chamomile Syrup and muddle well to release orange juice. Add gin and sparkling water to top off. Add bitters to your liking. Garnish with chamomile flowers. #cocktails #bitters #ediblegifts #recipe #holidays
