RECIPE ⬇️ Protein-Rich Chocolate Chip Cookies 🍪 These are grain-free, gluten-free, dairy-free, but they also taste delicious! INGREDIENTS: 1 can chickpeas (15oz), drained and rinsed 1/4 cup maple syrup 3/4 cup plant milk (I used flax milk for added protein) 1/3 cup peanut butter 3/4 cup flour (I used cassava flour, but you can use almond flour or oat flour as well, which are also gluten-free) 1 tsp baking powder 1/2 cup dark vegan chocolate chips — I used @enjoylifefoods 1 tbsp coconut oil 1 tbsp monk fruit sugar METHOD: Preheat oven to 350°F Place the first 4 ingredients in a blender/ food processor and blend until smooth. Transfer to a bowl, then add the rest of the ingredients Form the batter into bite-sized balls with your hands or a small ice cream scooper and place on a baking tray. I flattened the balls out because the ingredients don’t spread like a cookie with “conventional” ingredients. Bake for 12-15 minutes. You basically point out to other person one of their character strengths (e.g. creativity, humility, honesty, kindness, perseverance, leadership, etc.) and you say something like, “When you did ___, I really saw your INSERT STRENGTH HERE shining through.” How to Strength Spot (using the SEA model): S – Spot/label the strength in the other person E – Explain what you observed and how they used their strength A – Appreciate/recognize their value and the strength used (this one might not be appropriate in every situation, but the first two are!) Strengths spotting is a beautiful practice that can help you connect with your spouse, kids, friends or even a random person helping you at the store. RECIPE ⬇️ Coconut Carrot Cake (GF, Egg-Free, Dairy-Free) Ingredients: * 4-5 very ripe bananas * 1 cup shredded carrots (about 6-8 small carrots) * ⅓ cup monkfruit sugar (or coconut sugar) * ⅓ cup melted coconut oil * 1 teaspoon vanilla extract * 1 ½ cup coconut flour * 2 tsp baking powder * ½ tsp baking soda * ½ tsp cinnamon * ¼ tsp nutmeg * ¼ tsp salt Method: * Preheat the oven to 350°F * Line a 9-inch x 9-inch pan with parchment paper * Peel and mash the bananas * In a large mixing bowl, combine the mashed bananas, monkfruit sugar, melted coconut oil, and vanilla extract. * Stir in coconut flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until just combined, then fold in the shredded carrots. Dough will be much thicker than expected because of the coconut flour which is high in fiber and absorbs a lot more liquid than traditional flour. * Transfer the dough-like batter to the pan and bake for 35-45 minutes * Cool for 5 minutes in the pan before transferring to a cooling rack Coconut Cream Frosting: * 1 can full-fat coconut milk or coconut cream (leave in fridge overnight so thick layer forms at the top of the can. Scoop out the thick coconut cream and keep the watery part for smoothies or soups (or you can discard it) * 1 teaspoon vanilla extract * 4 tbsp monkfruit powdered sugar (or regular powdered sugar) * 1 tsp guar gum (this acts as a thickener, but it’s optional. HEALTH HACK ⬇️ Grilling season is here, and while you may love that smoky flavor of grilled meats, there’s an underlying health concern – the formation of carcinogens; specifically heterocyclic amines (HCAs), polycyclic aromatic hydrocarbons (PAHs), and Advanced Glycation End-Products (AGEs). These harmful compounds can form when meats are cooked at high temperatures. HCAs are found in the burned, crispy outside layer of cooked meat. PAHs come from the smoke and fire created by fat dripping on a hot surface. And when proteins and sugars are cooked at high heat and a browning reaction occurs (the Maillard effect), AGEs are produced. When consumed in large amounts over time, these compounds can contribute to various health issues, including cancer. However, pairing herbs and marinating your meat before you cook it may help! ROSEMARY: Rosemary not only enhances flavor, it also contains antioxidants that have been shown to reduce the formation of HCAs when meats are cooked. You can add a sprig of rosemary on your grill or use it in a marinade for your meats to help mitigate the risks associated with grilling. Dried or fresh rosemary can be used. OTHER HERBS: If you’re not a fan of rosemary, try other herbs like oregano, thyme, basil, mint and parsley, which are also high in antioxidants. Experts say it can’t eliminate the risk, but it may reduce it by lowering the formation of harmful compounds. MARINATE: Marinating meats with herbs, plus an acid like vinegar or lemon juice may also reduce the formation of carcinogenic compounds. Keep in mind, using marinades high in sugars and oils can actually increase HCAs and PAHs…experts say reserve those marinades for the end, after removing the meat from the grill. RECIPE ⬇️ SWEET POTATO GRANOLA 3 cups rolled oats 1 cup raw pumpkin seeds 3 Tbsp sugar (I used monkfruit instead) ¼ tsp sea salt 1/2 Tbsp ground cinnamon 3 Tbsp chia seeds 1 cup shredded coconut 1/4 cup coconut oil (melted) 1/3 cup honey (I used Manuka Honey) 2 sweet potatoes (mash) Preheat oven to 350 degrees F. METHOD: 1️⃣ Boil sweet potatoes, peel, then mash 2️⃣ In a small pot over medium-low heat, add the coconut oil, honey (or maple syrup) and mix. 3️⃣ Combine with the dry ingredients and mix well with a large wooden spoon. 4️⃣ Spread the mixture evenly onto a baking sheet and bake for 35-45 minutes. RECIPE ⬇️ Vegan Tuna Poke Bowl When I became vegan back in 2016, the last thing I gave up was sushi. Here’s the deal, I’ve loved eating raw fish since I was a tiny tot (I grew up in LA and sushi restaurants were a weekly stop), but nowadays, it just doesn’t align with what I want to put in my body. For the record, I’m not one of those vegans who tells others what to eat; if you enjoy eating fish and meat, go for it! I just choose to be plant-based because it makes me feel my best 😉 Anyways, if you’re vegan or you simply want to add more plant protein to your diet, try this tofu dish! Full Discloser: I found the recipe on @thee_burger_dude ’s feed and he called it Vegan Salmon. Somehow, his marinade turned his tofu an orange/salmon color, while mine turned pink/red…so in my book, I made Vegan Tuna. Either way, whatever you call it, he nailed the recipe. It’s delicious! What I eat in a day: Detox Edition Since I was traveling and eating out a lot in January, I feel like I needed a major detox. So this month, I stopped drinking alcohol and instead of regular coffee, I switched to decaf. I’m also focusing on eating more protein at every meal, which is essential for detoxification (amino acids – the building blocks of protein – bind to toxins in the liver and support their removal from the body). There are many things that contribute to detoxing the body (sleep, stress, physical exercise, environmental exposures, etc.), but your eating pattern is a huge component. What you eat can either help or hinder your body’s ability to process and eliminate toxins.
