3 cups water
3-inch piece ginger, halved lengthwise & smashed
6 peppercorns
3 cardamom pods
3 cloves
1 cinnamon stick
1 1/2 cups milk
2 tablespoons assam tea
2 bags pg tips
Maple to taste
Lightly crush spices, simmer with water and ginger until infused, 15 minutes. Add milk and tea and simmer 5 minutes. Sweeten to taste.
Vegan Queso (aka Nooch Dip!) For all!
2 tbsp evoo & 4 chopped garlic cloves—sweat
1 tsp smoked paprika—sizzle
Add 3 cups water, 1 cup cashews, 1/3 cup nooch, 1 tsp mustard powder, 1 small sweet potato diced, 1 chipotle pepper, 1 tbsp adobo (from the chipotle can), pinch msg—simmer until TOTALLY tender
Blend until smooth and season with LOTS of salt

If you can’t find a trompo near you, try this recipe (adapted from @alexstupak ) for pork tacos with a hint of pastor:
for adobo:
8 ancho chiles
8 guajillo chiles
1 chipotle morita chile
1 2-inch stick of Mexican cinnamon
1 tbsp achiote seeds or 1 cube achiote paste
1 tsp black peppercorns
1 tsp Mexican oregano
1/4 tsp cumin seeds
3 cloves
20 garlic cloves, skin on
1 cup apple cider vinegar
for tacos:
oil for the grill
1 cup adobo
Four 1⁄2-inch-thick boneless pork shoulder steaks
Kosher salt
12 corn or flour tortillas, warm
1⁄4 ripe pineapple, peeled, cored, and cut into 24 even slices
1⁄2 medium white onion, minced
1 bunch cilantro, roughly chopped
2 limes, cut into wedges
Salsa for serving
Make the adobo:
Remove the stems from the chiles and tear open. Shake out and discard the seeds. Tear into small pieces.…..
