Grab a big ol’ slab of meat and get that baby grilling!!! Here’s a brisket we just did in honor of National Traeger day. Recipe below!
First part of the cook I ran the Traeger at 225°. That goes for about 8 hours give or take. When the flat of the brisket internal temp reaches 160° you’re gonna wrap it in butcher paper. Crank the traeger up to 275° for rest of cook which is usually around 2 to 4 hours before you reach the pulling temp. Pulling temp internal should go from 205° to 212°. Depends on tenderness when sliding probe in meat. When it slides through with ease, it’s done. Next you set it in your pelican cooler for at least 1 hour. It can rest longer if needed then slice and enjoy!!
