From the cool elegance of @ropewalksl where we slipped arrack sours and compared Ceylon with Halmilla to one of the oldest bars in 🇱🇰 @sydneyhotelgalle where owner Yoshan took us thru an introduction to Navy Seal, Double Distilled, Old Arrack and Extra Special. Note my occasional moments of introspection at this whisky like distillation of palm flower juice. PS we also searched for the best banana I ever tasted at the old Dutch Fruit Market – and did much frog-kissing before I found was reacquainted with my perfect banana prince!! It’s worth coming to Sri Lanka for the bananas alone!

Sri Lanka recce: today outside Galle for cooking in a 280 year old agri-garden homestead complete with the original kitchen. Bought tuna landed that day from those boats and cut my the guy who helped catch it for a wonderful spicy dry braise but that dish of shallots, fried eggplant, little dried fish and chilli was a favourite – as was the toddy drawn from the tree that morning to finish… 2025 dates out soon. #srilanka #homecooking #foodadventure

It’s festival time in Colombo and time to check out @gini_outdoor_kitchen for lunch with @garymehigan as the next stop on our Sri Lanka recce. So delicious, loads of local produce and echoes of the island’s signature flavours. This is one heck of a trip! #joinus #foodadventure #soon Local tuna, a great local hard cheese grated over the roast cauliflower, succulent pork chop with a local mustard sauce and habanero apple sauce, some great seafood and a dessert of bruleed banana with dulce de leche style caramel. Yum!
From the drive thru paddies to get there to the view of surf break from the deck @smoke_and_bitters is one of the coolest and friendliest culinary destinations in Sri Lanka. Good things come from their smoker like those tacos and the cocktails are elite and arrive at pace (without batching!). Next the recce with @garymehigan moves on to Colombo and we’re excited. (And BTW thanks to those Sri Lankans who helped us with tips like my son’s mate at uni and @jayaflava )
Home cooking Iranian style at @kitchen55melbourne – who cares about limited choice when there is chicken fessajoon and a yellow prune stew on the menu. That saffron rose water ice cream however was the highlight.
Prep in full swing for the “Friends of Jim” dinner at the @hotelsorrento_ to raise funds for @bowelcanceraustralia and remember Jim Calombaris who passed this year – a beautiful human who we all loved. @kirstentibballs on dessert, @garymehigan on ravioli, @gcalombaris on beef main, @chefcandyb on everything else. Me, I’ve come up with a bottom of the Greek salad bowl martini and an Aussie sweet and sour pork meatball to reference two of Jim’s favourite dishes. Lunch sold out but you can still donate to @bowelcanceraustralia to support their valuable work!

Perfect! #gopies RECIPE. 220g raw sugar 1 egg 150 g self-raising flour 2 good tsps golden syrup 160 g sultanas 100 g butter, melted Preheat the oven to 180°C. Grease and line a 20 x 30 cm or 24 x 24 cm slice tin. Combine all the ingredients, except for the melted butter, in a large bowl. Pour in the melted butter and use a wooden spoon to mix everything together well. Press the dough into the prepared slice tin and bake for around 25 minutes. Cut while warm.

Found a gorgeous, huge and juicy celeriac at the local store at a bargain price. Made the simplest soup. Peel, dice and fry the celeriac until a little browned and softened. Same time fry sliced leeks and celery at their end of their life from the crisper draw. Reserve pale young celery leaves. Combine, add a fresh bay leaf from the garden and cover with stock. Simmer until the celeriac is soft. Remove bay leaf and blitz to silky creaminess with hot milk. Garnish as you like. I’ve used thyme, hazelnuts, bacon and those pale celery leaves. Cost: over 4ltrs of delicious soup for about $16.
